中筋面粉可以用的,比较有口感,低筋面粉就比较松软。 有多个原因导致多天后还不能回软,可能烘烤温度不够高,或者烘烤过久 (每个炉的脾气不一样),食材比例不对,太多面粉或太干…

I followed your recipe and my dough is very firm and not as soft as yours. Is it the cold weather? I have added 3 tbsp water and is trying and will let u know.
Hi. It maybe due to different brand of butter and flour. You may try not to add flour in one go. If the dough is very firm, try add some softened butter or corn oil.

I think your recipe on the water is too little. You may need to revise your recipe. Because the batter is very thick not as shown in your video is very liquidity.

I’ve checked my recipe and the video description, that I used 400ml water and 100ml corn oil, the batter should be as shown in the video because I used this recipe many times already. Different brands and types of flour absorb different amounts of water, if you feel that your batter is very thick, you may try to add a little more water or oil. 🙂

Thank you for your support! 1. Any brand of milk powder should be fine. Full cream is okay. I use milk powder from the shop selling baking ingredients. 2. Add all purpose flour if the dough is wet and sticky, add gradually until it is not sticky and can form ball.

Hi how to troubleshoot on density? Mine doesn’t rise that well and inside is dense not fluffy. What gives? After attempting the 4th time and almost give up lol
Hi. Thank you for your feedback. 🙂 Make sure you are using self-raising flour, when steaming, wait until the water boil then only put the Huat Kueh in, it should be bloom like a flower. This was my first attempt when shooting the video and was succeeded.

用常温牛奶,淡奶油是whipping cream,可以在超市买到。大概可以做5-6个(看大小),最好当天吃完,放入冰箱冷冻一下也挺好吃的😊

How many huat kueh can you make with 500g self raising flour?
It depends on the size of your mould. For me, I usually can make 8 huat kueh with medium size cupcake mould.

Not necessary to add. I add peanut butter to give it a savoury flavour. 😊 if you not adding the peanut butter, if the dough a bit wet, just add in extra corn flour or all purpose flour, you may also add more black sesame powder.

Not necessary 50g, you first mix all things until form the dough, if your dough still too sticky or wet, mean it still stick a lot to the bowl, you add all purpose flour little by little until your dough not sticky anymore. Don’t pour too much at once, if not the dough may become hard…If you want to make cookies thicker or chewier, add a little more corn flour instead of just all purpose flour.
In case the dough is too dry, and you feel cannot shape it (take some and try to roll it into ball), add some corn oil or softened butter, do not add too much at once.

You can substitute it with soy milk powder, or just normal flour also can. But without milk powder, the flavour, texture and richness of the pineapple tarts may be different. 🙂

So far I never make it into a big one, but with the same recipe, it should still fluff up. Even without the cross drawn with oil, it will still fluff and open (I didn’t make cross with oil for some of my steamed cakes recipe on YT channel), the cross most of the time allowing the cake to open to the way you want, it will open randomly if not making the cross or the oil not enough for the cross (based on my experience). Yes it works well with any steamer.😊
