THANK UUUU FOR SHARING… I am 60 and JUSTTT made my first patch of strawberry jam thanks to YOUUUU … had an abundance of strawberries from a friend NOW I KNOWWW I CAN DO THIS. I see FUTURE JAMS BEFORE ME … only cost was sugar ( my friend has a fresh veggies / fruits food pantry and always gifting me abundance of bounty to give to others I know in need) and PATIENCE… MOREEEE IMPORTANTLY I ENJOYED THE STORY OF THE WALLS OF Jericho come tumbling down and the way you shared it … BLESSINGS PS ( I know what I will be gifting in my near future) ❤

From Google: "Adding acid in the form of fresh lemon or lime juice is important for two reasons: First, it makes for a more well-balanced jam, returning some of the acidity lost with the addition of sugar. Second, pectin needs acid to properly activate, or firm up." Next time do some research. And be polite!

Not runny. My method maybe long but always comes out nice and thick.
lemon juice is pectin !!!! it has a high concentration
