Question: whats the benefit of straining the tomato onion gravy , then again adding it to the same mixture. RB ko bolne dia karo pls he explains very well.
Actually Lababdar consists of 2 gravies , 1 is OTM(Onion tomato masala) & 2nd is Makhani gravy... Ratio of Onion & tomato in both of them is different, that's why we need to add strained Makhani gravy in OTM.Along with that on straining all those particles/spices which could not get grind properly will strain out & as RB said Lababdar mein gravy bilkul pure honi chahiye 😃.

In restaurant *OTM* i.e Onion Tomato Masala is used first and then added strained gravy while making any red gravy item.. OTM is the base for any red gravy or can say a basic body giving masala for dal tadka as well..

Where I live it's very hard to get Paneer, so instead I always use "Queso Fresco" means Fresh Cheese which is almost similar to Paneer.
You can make your own paneer at home
