    LIQUID DOUGH PARATHA
    Preparation time 10 minutes
    Cooking time 15-20 minutes
    Serving 4
    Ingredients
    For Liquid Dough (With Ghee)
    1 cup Whole wheat flour , आटा
    2 tbsp Coriander leaves, chopped , धनिया पत्ता
    1 tsp Ginger-Garlic paste , अदरक लहसुन का पेस्ट
    Salt to taste , नमक स्वादानुसार
    1½ cup Water , पानी
    ¼ tsp Turmeric powder , हल्दी पाउडर
    1 tbsp Ghee , घी
    For Without Ghee Liquid Dough
    1 cup Whole wheat flour , आटा
    Salt to taste , नमक स्वादानुसार
    1½ cup Water , पानी
    For Paratha Dough
    1 cup Whole wheat flour , आटा
    Salt to taste, नमक स्वादानुसार
    ½-¾ cup Water , पानी
    1 tbsp Ghee , घी
    A pinch Carom seeds , अजवाइन
    1 tsp Ghee , घी
    A pinch Degi red chilli powder , देगी लाल मिर्च पाउडर
    ½ tbsp Ghee for frying , घी
    Process
    For With Ghee Liquid Dough
    In a bowl, add whole wheat flour, coriander leaves, ginger garlic paste, salt to taste.
    Add Water, turmeric powder and ghee whisk well.
    Rest the batter for five minutes.
    Heat a non-stick pan, pour prepared batter with the ladle & spread evenly.
    Cook on low flame until it changes color then flip and cook from the other side.
    For Without Ghee Liquid Dough
    In a bowl, add whole wheat flour, salt to taste and water whisk it well.
    Rest the batter for five minutes.
    Heat a non-stick pan, pour prepared batter with the ladle & spread evenly.
    Cook on low flame until it changes color then flip and cook from the other side.
    For Paratha Dough
    In a parat, add whole wheat flour, salt to taste, water and knead a semi soft dough.
    Add some ghee and knead it again, cover it with muslin cloth and keep it aside for future use.
    Roll the paratha in a round shape and sprinkle some carom seeds, ghee, degi red chilli powder.
    Fold it into a book fold and roll it again to a square shape.
    Gently press and keep rotating the paratha on the pan. Cook for 1 minute, drizzle a little ghee on top and flip.
    Cook for one minute while gently pressing. Make sure to press the edges as that part takes more time to cook. Flip and cook for a minute and continue flipping and cooking until you see golden brown spots all over. Take it off the pan.
    Serve hot.

    Thank you Ranveer. That liquid parantha is/was being made for hundreds of years in South Indian families with different names in Telugu, Tamil, Kannada and Malayali households. Absolutely agree with you, calling it Parantha is really a bettrayal of Parantha eaters!

    I love the honesty in this video. First time I tried making the liquid dough paratha it turned into a pancake. As he said... It takes so long to wait for it to cook. Traditional is better!

    This liquid paratha was always there , for bengalis it’s known as Gola Ruti . But we never recall it paratha. Thanks for showing the difference chef 🙏🏼

      What country are you in? Most of the countries have Indians living there and with that there are many Indian stores that sell the required utensils. Jada hai to ghar aaye to ghar se le jana is baari

    Exactly, I agree with Ranveer in calling this a cheela, my mom tried this and she had the exact same complains as him, she was like this is double the work it takes to make an actual paratha and called this as a roasted cheela

    To answer 'kya mehnat lagi?" It saved cleaning of multiple dishes.
    Throughout my college years, we would wash and clean the chakla-belan and suka atta thali, barely once a week. We'll simply dust it off before use during the weekday. After a 14-16 hours long day, no one gives a hoot about the difference between chila and chapati.

    with liquid atta, we malayalis have been making dosa since ages😂 we call it dosa, and not paranta or roti..some like it soft, some like it like roti. we make them with wheat and maida as well.

      Dosa is a pancake/crepe so it is made from batter, not a liquid dough. Dough is entirely different.

    I also tried liquid paratha last weekend n this is what i observed:
    a) difficult to prevent ur paratha from turning into cheela
    b) takes hell lot of time in cooking only one cheela
    c) no matter how long u cook it it remains gooey from inside
    RESULT: my husband refused to eat it n i finally had to make normal parathas
    Conclusion: never gonna make this again😅

    The way liquid paratha is useful to me, is in US. When travelling with kids, it is useful not have to carry chakla belan and knead dough to make paratha for kids. Especially for young kids when they cannot eat outside food like pizza burger. Very convenient to do in an airbnb.

    Ohh my God., at last some body practically showed the fact. I was wondering while scrolling the TH-cam how everyone is happily making the liquid paratha or chapati or roti while I could not. Really it is time consuming., and the result is not so good. My son told me not to try such things seeing the chipchipa peeth inside the hot roti which is not good for digestion also. Ranveer thank you very much for this demo which made me feel that I am not alone to feel the discomfort with this liquid dough.

It is about following trends blindly and brainwashing others similarly (trying to convince others that you are doing something genuine). As Chef Ranveer said, the "liquid paratha" is NOT a paratha to begin with. For starters, how about being honest about that - rather than pretending that it is a "paratha"...because, hey..who will bother to verify? Also the liquid paratha remains uncooked because it is liquid. Will any of these liquid paratha chefs come clean on that?

Funny how working women claim they don't want their family to go hungry - yet they prefer personal comfort (due to the "liquid paratha") rather than ensuring wholesome food for the family (through a traditional paratha).

    Yes, I also tried that liquid paratha/roti just because it looked good and I thought it will consume less time as I don't need to knead the dough but surprisingly it took me around 10 minutes and I also cooked in low flame so that it cooks well but it was still not cooked from inside . I had added lot of ghee and malai to soften the batter but of no use. Innovation is good but too much might lead to disaster/ dissapointment.

    Totally agree. Paratha toh traditional hi achha hai ..what interests me is travelling mei i usually a small stove and a flat base wala cooker. I miss eating rotis and this recipe is a good alternative

      That Liquid prontha is actually Pan Cake. And Pan cake mix is different I guess. I cook pan cakes for my kids all the time

    This was a lot of fun. Ranveer is a renowned expert and hails from the home state of the paratha, but graciously acknowledged the innovation of the liquid dough variant. I would actually like him to make another video where he steelmans the liquid paratha, that is experiments to see how it can be improved. For example, I have seen some recipes add sugar and salt to the batter, could that make a difference in how heat is trapped to cook the insides?

    I think this liquid paratha could work well for people who have arthritis in the hands and can't knead well. But yes, traditional is better.

      I have arthritis and I think very few people will understand the difficulty and pain due to it. Even if on somedays I feel more energetic and less or no pain, and do such tasks, i feel the pain later. Or I get so tired afterwards that it’s unexplainable. Ker toh lete ho, phir bhukatna khud ko hee hai.
      On the other hand, some people have huge ass families where everyone doesn’t contribute in house chores. And if you are the one cooking, you cannot not offer or cook for others too. So in that case, the workload increases so much more of you are cooking. There’s no harm in trying to make life easier for yourself. I think the chef doesn’t know the pain of cooking for 10-15 or even more people every single day, as housewives, with no pay, or appreciation, no contribution from others, not being able to say no to it, or with painful illnesses like arthritis.
      Anyway, my mom and I, both suffering from arthritis, did try this liquid dough and it did not work.

    We always prepare it for our children. We add jaggery into it. Fry it in pure ghee. We call it sweet pola in marathi.

    came back to this after a year while on a healthy lifestyle journey: cheela and liquid parathas has difference....
    Cheela: is when we don't cook it after the sides release the pan
    Liquid Dough: is when is keep cooking it further till it swells and become a little fluffy, its a life saver for gluten free flour, that concept comes handy when cooking with millet flour or when keeping the batter pre-mixed during busy times like pre-school or pre-office .... not every recipe is a weekend recipe to relish
    Paratha: is the perfect traditional delicacy and the king

    We have been making this since generations as wheat dosa, people have made this into paratha but actually this takes more time to cook.
    Other thing is, a person eating 2 regular paratha will eat 4 or 5 of these thus increasing cooking time.

    Although I completely agree with you chef, I will share a perception with you. my mother (who is a neat freak) hates making paratha/ roti because of the dust of atta (while kneading the dough, while rolling and while cooking them, on the counter top and on the stove. I think this technique will resolve her problem with parathas

    Absolutely!!! I tried the liquid roti😊knowing fully well what I was going to get was a cheela/poora. Didn't even want to serve it to my husband. I ended up litrrally frying it on the tawa. BUT if you have trouble making dough or rolling a roti due to various reasons then this is the second best thing.

    Is video me Dosti paratha bhi add kar sakte hain. That is two chapatis coupled together, with a layer of ghee in between and cooked/'senkoed' like paratha. Very quick, and healthy and mass produced.

    Kneading the dough is a better method. But when one cannot knead due to certain health concerns the liquid method is better though it takes long to cook in medium flame.

    This is great example of evolution journey which starts from traditional things to trying trendy things and going back to roots which is traditional authentic things! May it be food, lifestyle or clothing I am returning back to pavilion after trying it all.its a journey I must say. Urban cities me rehne ke bad, westernized food try karne ke bad ma ke hath ke dal chawal hi hai jo dil ko sukoon deta hai..

    Such recipes are suitable for people who can't knead a dough due to physical limitations or debilitations. Or who have skin allergy to flour. It is not for normal healthy folks.
