I would love a narrated version of these videos, some discussion on what your doing and why would be brilliant. As a non-chef it would be amazing to understand your thought process and decision making, as clearly there is a huge amount going on

@@jsaylor1980 i worked in a restaurant before doing that exact job , and it’s mostly organising the orders , making sure the standers are high , food it hot etc

How do you know what to shake what to check on what's cooking when I'd be absolutely burning everything your doing 50 things at once I can't even make cheese on toast
Love these. I'm the head chef at a top steakhouse in Colorado and it's nice to see the structure. I pay more attention to all the equipment and processes than anything lol
Exact same here. I’ve worked in kitchens for almost a decade now and I can’t get over how nice this kitchen is 😂 and the pass is so organized I love it
People who haven't done it/been around it don't really understand the level of thought and comm that goes into running the pass. I have 13 years of serving experience, but I crossed to being a chef awhile back. So I see it from both angles. Also, I'm #2 in the kitchen, but I was appointed pretty quickly as the guy in charge of making sure the FOH employees weren't up to anything...😂
It's always nice to see a POV of something other than a chef standing at a station making the same few dishes. To be able to see the teamwork that it takes to put out these great dishes at the pace and quality that they do is amazing. Keep up the great work!

Organizing orders, quality checking, kitchen and service staff management, etc. Head Chefs had the hardest part of making sure that every operation runs smoothly.
Watching this POV, made me respect the head chef at the restaurant I work for even more.
This team is so orderly, calm and fluid that I had fun watching.
Brunch crushes. Especially after a long saturday service. I love how you guys show the whole service, mistakes and misfires included. Even in the crazy rush standards are kept. Super awesome video guys.

Somehow when in an office working alone this seems like ASMR to listen to.. Always find it fascinating how it all comes together and how food remains hot.. This video has made me want to have scrambled eggs for lunch.

Really appreciate the "hey, we need to keep an eye on this, here's how to fix it if it happens again." It's a lot more... productive... than my time 😅 I may have actually stayed in food service if that were my experience

Hey @FallowLondon..... Love the videos of your service's. Keep them coming. What would also be good to see is what you're doing on the pass when the tickets come in, for example, when Jack writes the numbers on the tickets (I assume table numbers), or when he highlights something on them. Also, it looks like tickets are printed in multiple places in the kitchen and what orders are Jack and Will giving and why.
I appreciate that providing an explanation may be hard to do during a busy service so maybe you can take a previous video and narrate over that. Just a suggestion.

I work in a similar position in food service but no where close to this level. I plate and serve the orders and while the work is hard and stressful, it is fulfilling. Eventually i want to up my game to this level. It looks even more fun.

7:40 That was exactly my first thought when I saw that scrambled egg. It was very lumpy and dense (Rock solid in Gordon Ramsay dictionary). Great quality check, Jack.

@@onixtheone well, I also would love to eat it. It just great to see a chef trying to maintain the quality and make sure customer always get the best food. You could see the hesitation a little bit after he's stirring those scrambled egg, but still choose to restart it.

One ticket with several dishes represents often one table with several guests. I can see that the service is not syncronized for each table and the time on the ticket. I can see there is another system in use there they work over several tabels/tickets syncronly.

It's a European style scramble
Small trays, we use small/medium pizza trays
Black micro fiber would probably be provided by a linen company who would wash all the tea towels and cloths. Alternatively Google it

POV: Head Chef Slow Brunch & Lunch Service at an Average Bristol Restaurant for comparison would be awesome. (I could never work at that speed. I'd get a heart attack before age 40, but it's amazing to see people who can handle it.)

What is the Chef doing with the high-lighting and sharpie? Im assuming he crosses off what has been done and high-lighting what needs to be done?
Pretty much. Plus writing the table number bigger for easy to spot
Sometimes they highlight modifications, allergies, special service notes, if the table is VIP
