Southwest Pickleback Pig Tails
Inspired by TheRootBoy Cooks, here is my take on bacon wrapped country style ribs.
In my version I am brining the pork in Pickleback pickle brine.
During a trip south I had the opportunity to hang out with RootBoy and told him about Pickleback and he decided to give this brine a try.

You just overcooked them. The air fryer cooks way more efficiently than most people think. They were probably done after the second 7 mins or close to
I still use this particular 'air fryer' every once in a while for small cooks, though they only made it for less than a year. Took a couple of uses to get used to it, as the directions were worthless. Thanks for checking this out Bryan.

I have 2 of these boxes. You need the larger Box, Box #2. You have Box # 1 for pigs under 70lbs. That pig you had was over 70 lbs for sure and almost didn’t fit in the box. No way was it completely done in 3 hours.
The pig we purchased for this cook back in 2014 was just about 70 lbs if I can remember that far back. It was a tight fit, but cooked up real nice in the four hours they recommended. We did flip it at about the 3 to 3.5 hour mark. Still using this after nine years, a great product. Thanks for checking it out.

Edward, sorry for the late, late reply. Do you have a Shirley on order? I got The Sloppy Jalopy in 2015 and the insulated firebox was a new item. Ordered it because I was going to use the cooker all year round and I did seem to me that it helped in the dead of winter.

You're gonna really dig the new cooker, nothing like these anywhere. As I see all the new cookers coming online I am glad there there were not that many options back 'in my day'. Best two for me, aside from the fire box was the narrow frame and the removable tongue.

Hey Johnny, how's everything going? Have to say the KUDU is a fun little cooker. I had been experimenting with open fire cooking in the fire pit, but this makes it better as it is raised up. Also being able to take it with my to other locations is great. I did pick up the rotisserie which I think is a must have addition. Take care.

Never had pickleback, but sure had my share of drinking pickle juice from the jars! Love it.....got to try it with bourbon now. Oh, and cooking with it too :) "Bacon Wrestling" should be a new olympic sport.... if ribbon dancing and synchronized swimming can be in there then so can bacon! Yes, finding good quality healthy cut, meaty streaky bacon has fallen off the grid for some time now. All we get is falling apart, hyper expensive fat strips~I'm with you on that Joe. Hey Joe! Great to see you do another video! I feel ya on the bacon conundrum. These days I rarely cook with bacon because it's mostly fat and what's left after cooking is pitiful! I've checked my local butcher shops and the price they're charging is highway robbery! Next time I'd try some prosciutto!
