Kleicha ( Date cookies ) ✨
These cookies, which fill the house with a pleasant scent, are wonderful. I'm here with a recipe for "Klecha" that are crunchy on the outside and soft on the inside, filled with dates and walnuts. These cookies, a must for Eid tables, it’s a traditional type of cookies unique to Iraq. It is a must for every Eid. It's a recipe worth making, I suggest you make it for the Eid too.
This recipe yields 5 trays of kleicha. If you want to make less, you can reduce half the ingredients and make it like that. You can keep it in the deep freezer ❤️
Kleicha ( Date Cookies ):
1 pack of fresh yeast
4 cups luke warm milk
400 g melted butter
1.5 tablespoons of kleicha spice - a type of spice mixture, alternatively 1 teaspoon of cardamom)
1 teaspoon powdered cardamom
1 tablespoon sugar
1 teaspoon salt
11 cups flour
Ingredients for date filling:
1 kilo soft dates
1 tablespoon butter
1 teaspoon cardamom
1 teaspoon cinnamon
100 g walnuts
Ingredients for walnut filling:
200 g walnuts
4 tablespoons sugar
1 teaspoon cinnamon
Over:
2 eggs
Sesame
Preparation:
For the dough, add yeast, luke warm milk, melted butter, sugar, salt and spices to the mixing bowl and mix. Let's add the flour slowly and get a soft dough that doesn't stick to the hand. Rest for 1 hour.
Remove the seeds of the dates for the date filling. Let's wet our hands from time to time so that it will be easier to remove. Melt the butter in the pot and add the dates. Let's cook over low heat until the dates become soft. Add the spices and mix. Let's add the walnuts we put through the chopper last. Divide the date paste into 3. Let's put each one on baking paper, take another baking paper, cover it and roll it out to the size of a plate with a rolling pin.
For the walnut filling, add sugar and cinnamon to the ground walnuts and mix.
Let's divide our dough into 4. Roll out the dough to the size of a plate. Let's put the date paste on it. Arrange it equally on all sides, and put more dates on the edges. Roll the dough into a roll and roll it out with our hands. Let's cut off the excess dough from the edges with a knife. Cut the roll into 2 cm slices. Dip each one into the beaten egg and coat it with sesame seeds. Press it with hands and place it nicely on the baking tray.
For the walnut filling, roll out the dough to 1 cm thick. Shape it with a glass or round mold. Let's take a teaspoon of the walnut mixture and close it from the edges. Roll it and put it on the tray. You can also make it simple if you want. Brush it with egg and sprinkle sesame seeds. Cook it in a preheated oven at 225 degrees. When the top is brown, take it out of the oven, do not overcook it so that it does not become dry. The Kleicha cookies are ready to eat.

    Homemade warm, crispy baguette, breads that you can make for breakfast or dinner. You can easily make it with few ingredients ❤️ Baguette: ingredients: 400 g Flour 100 g whole wheat flour 350ml Water 1 teaspoon yeast 1 teaspoon sugar 2 teaspoons salt Over: Cherry tomato pesto sauce Burrata or mozzarella cheese Preparation: First, put the yeast, water, sugar and salt in the mixing bowl and mix. Then add the flour slowly and knead for about 5 minutes. Let's do 3 sets of folding in total, 30 minutes apart. Oil our hands while folding. Cover the dough and put it in the refrigerator. Let's wait 12 hours. Roll out our dough with our hands, shape it into a square and divide it into 4. Bend one side of the dough inward and the other side inward and roll it with our hands, keeping the ends thin. Place the baguettes on the tray and let them prof for 1 hour.     This focaccia recipe is one of our favorite breads to bake at home. Super easy. Prepare delicious sandwiches that are soft on the inside, crispy on the outside, and topped with olives and onions. My focaccia bread sandwiches were filled with homemade pesto, homemade tomato sauce, fried chicken, and greens. Be sure to try this sandwich, you will love it 🥰 Focaccia sandwich: İngredients: For the dough: 1 1/2 teaspoons yeast 2 cups hot water 3 tablespoons olive oil 1 teaspoon sugar 2 teaspoons salt 4 1/2 cups flour 1 onion olive fresh rosemary Tomato sauce: 3 Tomatoes 1 clove garlic Small bowl of pumpkin puree (optional) 4 leaves of fresh basil salt Black pepper For chicken: 150-200 gr chicken breast 2 eggs 1 bowl flour 1 bowl bread crumbs Salt Black pepper 1 large mozzarella For pesto: 35-40 leaves of fresh basil 5 tablespoons olive oil 1 tablespoon parmesan juice of half a lemon 1 teaspoon garlic powder 1 teaspoon salt Into: Mayonnaise Foliage Hot sauce (if you want) Tomatoes Preparation: Add yeast, water and sugar to the mixing bowl and let it sit for half an hour to activate. Then add olive oil. Add flour and salt, mix. Get a soft dough. Let the dough rest for half an hour. Do 3 sets of folding, 1 hour apart. Add salt and pepper to the chicken. Dip it first in egg, then in flour and breadcrumbs, again in egg and breadcrumbs, and fry it in a pan in hot oil. Then put the mozzarella cut into slices on the chicken, keep it in the oven until the cheese melts and take it out. Make it when you want to serve it. Ardından zeytinyağı ekleyin. Un ve tuzu ekleyin, karıştırın. Yumuşak bir hamur elde edin. Hamuru yarım saat dinlendirin. 3 set olarak, 1 saat aralıklı katlama yapın. Sonra üzerini örtüp hamuru 10-20 saat buzdolabına kaldırın. Tepsiyi yağlayın. Hamurumuzu tepsiye güzelce yayın ve 2 saat dinlendirin. Üzerine zeytinyağ gezdirin ve parmaklarınızla üzerine bastırın. Tavuğu uzun dilimler halinde kesin, et dövme aleti kullanarak, tavuğun yumuşamasını sağlayalım. Tavuklara tuz ve karabiber ekleyin. Önce yumurtaya, sonra una ve galete ununa, tekrar yumurtaya ve galete ununa buğlayıp, kızgın yağda, tavada kızartın. Daha fazla tarif için, beni takip etmeyi unutmayın ❤️ Patatesli havuçlu mücver: Malzemeler: 2 adet patates 2 adet havuç 2 yumurta 4 kaşık un 1/2 demet maydonoz 2 dal taze soğan 1 çay kaşığı karabiber 1 çay kaşığı kırmızı pulbiber 1 tatlı kaşığı tuz Pita ekmek için malzemeler: 1/2 yaş maya veya 1 paket instant maya 2 su bardağı ılık su 2 yemek kaşığı sıvıyağ 2 tatlı kaşığı şeker 2 tatlı kaşığı tuz Yarım çay bardağı buğday unu 4,5 su bardağı un Yoğurtlu sos için malzemeler: 2 su bardağı yoğurt Taze frenk soğan 1 tatlı kaşığı kuru dereotu 1 çay kaşığı kırmızı tozbiber 1 çay kaşığı tuz Yapılışı: Öncelikle hamur için yoğurma kabına maya, ılık su, şeker ve yağı karıştırın. Ardından unu ve tuzu ekleyin. Unu kontrollü ekleyin, hafif ele yapışan bir hamur elde edin. Son aşamada hamuru elinizi ıslatarak yoğurun. Mayalanması için 2 saat bekletin. Hamur dinlenirken, mücveri yapmak için, patates ve havuçun kabukları soyun ve rendeleyin. Rendelendiğniz sebzelerin üzerine geçecek şekilde su ekleyin ve 15-20 dakika öyle bekletin. Tülbent le sebzelerin suyu sıkın veya elinizle de sıkabilirsiniz. Bunu yapmamızın sebebi mücverin sulandırmasını önlemek. Sebzelerin üzerine yumurta, un, doğranmış yeşillikleri ve baharatları ekleyip güzelce karıştırın. Tavaya 3 yemek kaşığı kadar sıvı yağ ekleyin, ocakta orta ısıda kızdırın. Bir kaşık yardımıyla mücverden alın ve tavada önlü arkalı kızartın. Her kızartma aşamasında, yağ döküp kızartıyoruz. Hamurdan mandalina büyüklüğünde yumaklar alın. Her bezeyi yaklaşık 15 cm olacak şekilde açın. Açtığınız pita ekmeklerin üzerini örtün ve yarım saat kadar dinlendirin. Tavayı ocakta orta ısıda kızdırın. Ve ekmeğin bir tanesini tavaya alın. Kabarcıklar oluşunca arka yüzünü döndürün ve biraz kabardıktan sonra tekrar döndürün. Şimdi ekmeğimiz balon gibi şişecek. Şiştikten sonra tekrar dönderip, biraz daha pişirin. Böylelikle 4 kere de pişirmiş oluyoruz. Pita ekmeklerini isterseniz buzlukta muhafaza edebilirsiniz. Yoğurt du bir kaseye alın ve baharatları, doğranmış frenk soğanı ekleyip güzelce karıştırın. Pita ekmeğin arasını açın ve sos dan gezdirin. İçine mücver, domates ve istediğiniz yeşilliklerden ekleyip afiyet le yiyin ❤️
