    A newbie here, why so many people on TH-cam tell me to shapen standard kitchen chef knife at 20deg. Why also 20deg from factory?

      @@rathernotsay9188 good question. 20 degrees is a bit too far in my opinion. If I had to choose one angle I’d probably pick 32 degrees. 16 degrees per side. Factory decisions are probably based on a few factors like durability and small bevel. It lasts longer too. But for slice power, 13-17 per side is probably a lot or better but also easier to damage. As with many things it’s a compromise.

      The machine is called a Tormek T8. The stone is the standard SG-250. A fantastic machine.

    I love sharpening videos. No matter what you currently do, your knives are handed to customers with a mathematically, scientifically, Concave edge. Does that matter? Does to some folks. A slightly Convex bevel is recognize this better than a slightly concave bevel. Secondly, use a scientific caliber and use trigonometry to measure multiple places on your sharpening job. I'll bet you a dollar every point you measure is a slightly different angle, maybe averaging 14 degrees a side. There are ways to sharpen every knife Convex, and every place on a blade bevel the exact desired angle.

      Glad you're enjoying the videos. Technically, mathematically and scientifically you're right because I'm sharpening on a round wheel just as the Japanese and Chinese have been doing for thousands of years. In reality though the curvature is so minute, so minuscule and so microscopically tiny as to be actually insignificant let alone visually perceptible in real life. The knives go out satanically sharp, they last a hell of a long time (because of the way I finish), every single customer and client has been so astronomically impressed that they all say they've (actually in real life) never (literally ever) experienced knives this sharp before. My butcher says my knives last so long that he's been using just one of my knives for weeks and weeks on end with only a light touch on his steel every few days. This blows his mind because before I rocked up he'd have to spend at least an hour every few weeks sharpening all his knives. Now he doesn't even touch them and prefers to use the one or two that I sharpened for him for literally all the tasks. A large butcher's knife (for cutting large cuts and steaks) and his boning knife which is still so freaking sharp that he also uses it for fine filleting. So maybe, just maybe, a microscopically concave edge means nothing or is in actual fact and real life a good thing. I suspect that the way I finish them is what makes the difference but yes, technically in the strictest sense you're right. But it doesn't matter at all in the real world. We both win.

    I too had a time getting a ceramic knife blade to sharpen . I used Diamond sharpening plates from DMT Dia-Sharp . I have 4 plates starting at 220 mesh , 325 ,600 , and 1200 . I was able to get a 5 1/2 inch knife very sharp . I gave it to a female friend and in her use she broke the blade . So I have in place given her several different knives . One Global 7 inch , one Sabatier and have a cheep Japanese 7 inch Chef knife to give her . She works in a kitchen in a store . I do like your work as well as your videos . I'm thinking of getting a Tormek T8 myself as well as a belt grinder . I have made knives in the past and now just finished putting a Iron wood wooden handle on a Japanese Takayuki 7 inch chef knife for myself .

      Cool. Ironwood is pretty hard to work with. Yeah, this video doesn't tell us everything we need to know about sharpening ceramic knives with aluminium oxide wheels but it proves that with some care they can be improved. I'd like to buy my own ceramic knife set to do more experimenting but for now I'm happy to say that it can be done. Glad you're enjoying the videos. I enjoy making them.

    It looks like you turned this into a business. I live in a country where people ride around of bicycles with a bell and what seems to be a 40 grit stone absolutely butchering and ruining peoples knives. I started sharpening friends knives after seeing how they were all getting destroyed. They dont even care if the stone rides down the side of the knife and take at least an 1/8 inch off the knife each time.

      There are a lot of fake myths about the Tormek. I've busted several of them. There are some much harder supersteels than S35VN which the SG wheel might struggle with but for now it's been a stellar wheel that's handled everything I've ever thrown at it included full ceramic knives, even wood. I ground an ebony bowie knife on one...lol Still got it unfinished. You can see it behind me on the wall under the word "sharpening" on the round wooden logo plate.

      @@charlesg5085 You know what's better than a T8? A used T8 that you picked up for a bargain. I bought both of mine used, second hand. The second one I actually got paid to buy because it came with so many accessories that I sold them for a profit. The first one came with it's own trolley and a heap of jigs and only cost me $650 so probably only paid about $100 for the T8 itself. Keep an eye on all the used marketplaces/craigslist/gumtrees...etc. One will show up. Have cash ready. No need to buy retail.

    hello, may you please help me to find a combination for sharpening with an aluminum oxide main stone, a leather wheel and a cw 220 composite wheel. What is better to use a leather wheel with the original pa70 paste or chrome oxide?

      I'm not entirely sure what you're asking me. Perhaps you could clarify or ask in a different way. I use the standard SG wheel, I've never used a composite wheel and I only use the standard Tormek leather wheel with Veritas chrome oxide (green) bar followed by a kangaroo tail leather hard strop. For me, the Tormek paste is too messy, too expensive and too much hassle. But I run a commercial operation so not sure if that advice is suitable for you.

    I had this identical knife which I gave to one of my daughters , along with 2 smaller knifes by this same maker . I hand sharpen all of my knives along with families knives solely using sharpening stones . I own from 150 grit to around 30000 grit . Rarely do I need a razor strop , but I do use when finishing on razors . I wasn't a fan of these only for the chipping on the edge because of their hardness . Nice looking knives though a little heavy in my opinion . I also had a 4 knife set which a daughter got last Christmas from me with cork handles , price was $ 1200.00 for the set . They were also Japanese knives . Great work and video's , keep up the great work . I'm retired and simply love sharpening knives , it's my passion . I just received 3 cheaper Japanese knives and am expecting 6 more that I will sharpen before giving out as Christmas presents . Have a great day .

      It's a block of wood with Kangaroo tail leather glued to it. It's for the final finish of the edge. The process is called "stropping" and removes the small wire edge (root of the burr) that remains after the main burr has been removed. It increases the sharpness a bit and improves edge retention also. I do it as a final step to all my knives now. Kangaroo tail is very very tough (the toughest) leather and has little ridges on it (which the kangaroo develops from pushing on the tail to jump) that seem to be especially good at catching the wire edge and removing it from between the teeth of the edge.

    Hi Baz, sharpened one very similar to that butcher knife for a customer the other day. It was made in Sheffield England by Geo. Wostenholm and Sons. It had a deer antler handle on it with ornate brass filigree near the bolster and on the end of the handle.

      As sharp as possible is always my aim but I think it would be hard for anyone to really tell the difference between 100 and 50 in real life use. 100 is hard enough and impossible for some people. The cigarette paper test I do on all my knives is about 120 or less and all my customers are super happy with that.

      @ Do quality of knife’s allow you to establish the degree of sharpness on the Bess Test? I have used sharpening stones last 3 years and now that you have been my mentor. I have purchased the T-8. So now I’m at the practicing stage. Keep up the good work!!!!!

      @@geopinebox Cool! I'm proud to say that I've influenced several dozen people to buy T8s. Yes, the quality of a knife's steel makes it easier to get a sharper edge. It certainly helps to keep the edge sharp too. Enjoy your T8. Write an email to Tormek telling them I influenced you to buy a T8. They won't answer my emails...lol

    For removing ezlock washer what tool do you use. I just finished fine grit sharpening on Tormek T8 but now I am having hard time removing ezlock washer to remove water stone wheel so that I could use honing wheel?

Also, I’m curious as to why you need to remove your Waterstone wheel to install your honing wheel. If I can understand what you’re trying to do I can help you better.

      @ . I have set my Silicon carbide wheel set to coarse, and water stone that came with Tormek t8 set to fine. It the part that holds wheel stone to Tormek T8. After sliding stone on it the part that on onside has arrow to lock and arrow for unlock, it threads on to hold stone wheel. I am planning to use silicon carbide wheel to get primary edge, and use water stone to refine edge. Then I would like to remove wheel so that I can set angle on leather honing wheel. I have the better knife angle setter that makes it very consistent for setting angle.

      @ they ez-lock nut just comes off very easily. Grab the two wheels and turn them against each other. Remember that the stone side is left hand thread.

    Hello Nice video as usual , I have a question why dont you use a diamond stone for this kind of work?

      Thanks. A diamond stone wouldn't last 5 minutes in my hands. Plus I'd be having to change the water every 20 minutes, plus the cost of the water conditioner...CBF to be honest. I like the SG stone. It does everything I ask of it, it's cheap enough for commercial purposes (especially when I buy them used, 2nd hand) and I like the way it feels and reacts and how I can change the grit in a few seconds. They're the super stone in my view. Diamonds are fine if it's just a hobby but in my limited view not really suitable for a commercial operation. The SG stone does wear out quite quickly when doing axes though. Maybe I was pressing too hard. Not sure. I could be wrong.
