Thanks so much for sharing your experience. I sharpened an old kitchen knife this afternoon. Tip first ! It works….. I have a Tormek for sharpening gouges (I’m an amateur luthier) and sharpen kitchen knives from time to time. I’ve learned so much from your videos. I particularly like the grading of the stone using cheap diamond plates. I’ve recently got the new version of the knife angle setter which I think I will be more consistent with. Thanks again for your videos. Good luck with the knives. They are very beautiful.
Hi Baz, I now have my gouge set up to produce the results I like for gouges that I use for gouging the fronts and backs of cellos and various other jobs like fluting. I started with SVD-186 which is really for wood turning tools, now I use SVS-38. Also I invested in the Tormek diamond wheels so I can grind gouges on the flat sides using mb-102.
Baz, with the older knife jig, have you ever had any issues when sharpening thicker blades (like 6mm+) ? I see from a Tormek presentation that the older style jig doesn't centre blades completely, and then when you flip it over to grind the other side you have a slightly different angle. Problem for you or not really ?
@@loiphin like most others, I've never noticed a difference. If it's a concern I could always adjust the angle but I've checked the angle on some super thick cleavers and never found a variation in angle. Although I can see how it'd be possible. I think the difference is so minute and minimal as to be mostly academic

@ most importantly, the heat treat is good. If there was more retained austenite, it would have made that burr super gummy and hard to get rid of.
I would have liked to see how sharp it was before you used the strap
It will always a wire edge before the strop. Not much point measuring it with a burr still attached.

Most important is what happens after the grinding! if you can get one of those kanguru tail strops chances are good!
