Sharpening "in the field" is sometimes alot closer than what you think it is
so a couple weeks back I wrecked an edge and brought it back on a handy rock. a couple days later I watched a youtuber dismiss the whole idea of sharpening in the field and I thought id give a couple of thoughts on the idea that sharpening in the field is not always what you might think it is. caltoncutlery.com

I end up sharpening out and about all the time, in the back yard, at the storage building, out fishing with the kids etc etc. Edge falls off and out comes the double stuff 2. A minute and I'm back to a hair popping edge/micro bevel. Out camping for a week with the kids and same thing, I want to keep a great to use edge. I disagree on the claim that fine edges have no slicing ability. I find with protein a high grit edge 10k or greater cuts super well. The protein feels like it just moves out of the way of the edge vs when the edge is coarse its tearing more than cutting.

on clean meat I can see your point. but the second you add in gristle or silver skin, then the higher grit edges start to struggle. I did a fun little series awhile back probably title opinel edge tests, where I took 3 of the carbon steel opinels, and put a dmt 325, king 6,000, and a king 6000 stropped on crox and used them to work up a mule deer that I had picked up a week earlier. Dressing the old edge is necessary when the edge is chipped. It can be seen under magnification. If the edge is not dressed it might chip easier, but bit it is not necessary to dress the edge all the time. In my opinion it is only necessary if the material is fatigued already.

For bread I use Victorinox serrated knife which is possible to sharpen on one side because serrations are cut on other side so entire edge can be sharpen relatively easily, it works very well. For everything else I use Japanese knives but all of this knives are stainless and full tang. For sharpening I use mainly King 800 and King 1200 and natural hard jade stone from China. For jade stone I use fine nagura as additional abrasive, so jade stone works mainly as flat surface. King stones are used for general sharpening and jade stone is used for finishing or for micro bevel depending what is needed. I have got also Norton India Fine and Japanese 8000 stone and couple of rough silicon carbide stones which I use mainly for tools sharpening. I use one cheap silicon carbide stone only for Japanese stone flattening.

Been loving this series for a few weeks now, explained very well. I love 3 blade stockman knives for this very reason, you can have different blades finished for different cutting tasks. I like 2 blades with less refined edges and one finished on a transluscent. It is more than i have ever needed. I always say, sometimes you need a razor blade and sometimes you need a crosscut saw.

I agree 100%! For what I do...cooking/outdoor work...I rarely finish above a soft Ark. I also tend to use stropping compound on the coarser side to retain "tooth". My current favorite is Bark River Black. For meat cutting, I wouldn't want anything above 400 grit. If you haven't got "tooth", the "silverskin" on a muscle will stop a highly polished edge dead in its tracks and can wind up cutting the meatcutter. Keep preaching!

6/1/2024 I tried this method just now & WOW!!! GAME CHANGER!!! I saved some old dull blades hoping to find a way to sharpen them & this worked GREAT!!! I used Sensodyne Toothpaste (all I had in the house), spread a thin layer on a post it note and dried it with a heat gun. Marked my dull blade with a sharpie marker so I could see the edges to sharpen. I took a Bic pen, pulled out cartidge with a needle nose pliers and took a tiny piece of Loctite Fun Tak (bought at Walmart) and wedged it into opening of pen. I put the rubber protective blade covering (comes with the blade) on the dull round side of blade (opposite end of blade) and used pliers to jam it into pen. The rubber blade cover and Loctite Tak really helped to secure it into pen. When I removed blade from pen, I pulled it out of rubber cover with pliers and left rubber cover intact in pen casing for future use. Rubbed BOTH sides of blade 15 times each, over dried toothpaste, then tried it out on machine. I used cheap white cardstock & cut out two 1" circles; cut perfectly. Then I cut out a Rocket Image (4th of July) with intricate tiny star design inside & it cut precisely!! These stars were VERY tiny, less than 1/8." TRY THIS METHOD; IT REALLY WORKS!!!! 5 STARS!!! HIGHLY RECOMMEND!!!!
