Penang Nyonya Lam Mee Recipe (Birthday Noodle)

In this video, we’re diving into the rich and flavorful world of Penang Nyonya Lam Mee - a comforting noodle dish with a savory prawn and pork broth, packed with prawns, pork belly, and vibrant garnishes. Perfect for family gatherings or a cozy meal at home!
Ingredients:
Soup Base:
• 1.5kg pork bones
• 1 medium-sized jicama
• Prawn shells from 600g prawns
Main Ingredients:
• 5-6 servings of yellow egg noodles (blanched)
• 5-6 servings of vermicelli (blanched)
• 600g prawns (shelled and deveined)
• 3 eggs (fried and sliced)
• 200g bean sprouts (blanched)
• 200g pork belly (boiled and sliced)
• 10-12 fish balls
• 2 fish cakes (sliced)
Seasoning:
• Rock sugar (to taste)
• Salt (to taste)
• 2 tsp mushroom powder (optional)
Condiments:
• Spring onion (chopped)
• Coriander (chopped)
• Chives (cut)
• Fried shallots
• Fried garlic oil
Sambal Belacan (Optional):
• 6 red chillies + bird’s eye chillies (to taste)
• 10g toasted belacan
• 2 tbsp lime juice
• 1-1½ tsp sugar
• Salt (to taste)
🔥 Tips for the Best Lam Mee:
• For a deeper broth flavor, simmer for at least 3 hours.
• Don’t skip the sambal belacan - it adds a spicy and tangy kick!
• Adjust the broth’s seasoning to your liking with rock sugar and salt.

1.5 tbsp fish sauce + 1 tsp salt + light soy on oyster is too salty for this amount of food. I made this twice now and both times too salty still. Otherwise it''s good.
You can reduce the fish sauce and salt a little bit next time. 😊

There is a certain kind of laksa for every state in malaysia, but to me sarawak laksa is the one and only,well besides penang laksam or asam laksa,nevertheless do enjoy msian tastes guys

Write ingredients
Put fried garlic is better. Fried garlic will infuse better taste on the gravy. Put 2 tbsp of abalone sauce, some rock sugar (1 tbsp). Gravy have better depth flavour.

You missed putting it to steam & you should not cook the coconut milk on its own because you will release oil from cooking on its own. Mix well the coconut milk with the egg mixture then put it to double boil and stir occasionally until mixture looks less viscous then steam
I rinse rice in the pot under running cold water for a minute or two.
