Temperature Surfing Hack - For Your Lever Espresso Machine
มุมมอง 1.9K3 ปีที่แล้ว
Temperature surfing is the process of varying your boiler temperature to extract better coffee. If you have a PID or another type of control this is very easy. But with a lever machine, it often involves setting a pressure stat that can be hard to access. Use this technique to easily test if a lower temperature is better for your roast before you go through the trouble of adjusting the pstat. L...

The Very First Espresso PULLED on Lever Fanatics!
I really like your video style (unlike the other commenters). Reminds me of Nick Shabazz, a great pocket knife reviewer. Keeps me very entertained but focussed on the product, not the speaker. Anyway, I am interested in the Olympia Cremina. They have a direct pull and a spring version. Can you help me understand how the two approaches will affect the resulting espresso? Is there more potential for varying profiles with the direct pull but a trade off with consistency? Thanks!
You are correct, but a lever machine is also the best machine after years of trying other machines. After using a Rancilio Classe 5 at home since 2016, but after watching a video about the Profitec Pro 800, I decided to sell the Rancilio and go with a lever machine. I can plumb clean RO water directly into the Pro 800, and have never tasted better espresso. I also love the simplicity of design, and much lower risk of problems like experienced with the Rancilio. Thank you for sharing your information on this simple and amazing brew method.
Great video! I began my espresso journey with a Rancilio Classe 5 commercial machine five years ago. Last year I purchased a Profitec Pro 800 lever machine and my espresso dreams came true. I can plumb RO water directly into the boiler, and the bottomless portafilter basket holds 22 grams. A 2 group head Pro 800 would be awesome, but given the incredibly creamy espresso this amazing machine produces, I have made great use of the machine as it was designed and built. Thanks again!
Most decafs seem to be dark or medium dark roasts, at least in COLOR. Can you get medium light, or light roast decaf, that is HONEY PROCESS?
Do you find that your decaf in particular,,is able to hold a creamer crema the way regular espresso does - or does it fall through the surface into the rest of the cup?
Is it fellinibly plausible to pull sprovers on this beauty?
Can You Show, how to Remove the Cover to reach the Pressostat ? How can i remove the knob for water an steam ? Than you.
How Long does Your ponte vecchio take to Heat up ? Mine takes about 45 Minutes and i have to Flush the group head quite a few times.
To pull the lever a quarter, a half and back, once more…you really think you get the best of your beans? Really?! Nonsens.
Bold Claim: If a lever machine is your first machine, a lever machine will be your only and last machine.
Just wanted to say thank you for all of the very informative and well done videos on the Ponte Vecchio Lusso! As you know, this machine has been around, in one form or another, for years. Recently, it seems much more difficult to buy ready to go in the U.S. Do you have a contact email? TIA
Spending in more than one espresso machine is the sign of a rich man. Something is wrong here in this monologue, not a diatribe. Wasted three minute plus the writing.
i have been completely scared to change the piston\seal on my Ponte Vecchio Export Lever and ordered the tool and full piston/seals and put it in the cupboard..definately not what i was thinking so going to do it soon. Dont happen to have how you replace the seals on the steam knob? mine has rotated a full 360 and cannot turn the steam off when on and it looks like you just unbolt it and slide it out
You drop pressure, not temperature
Love it mate... and love a lever.
May I ask where you purchased yours? I can’t seem to find a reputable vendor in the USA.
Lovely machine. Two groups is great.Ponte doesn't t make double shots. When having guests two groups is ideal.
I have a PV Lusso. I love it. I've had it since 2017. My 3 gripes are 1. Not a standard portafilter. Makes it difficult to get aftermarket parts. 2. The drip tray is a disaster. 3. The hot water spigot is useless. It sprays water with such force that you can use it without spraying water all over your counter. That than that, I love the machine. It's my daily driver and have no regrets.
what size is the portafilter?
Are you talking about temperature or pressure, Totally different things. Rubbish video and mis leading.
Funny to run across this video. I’ve been using an Export model for over 7 years, however I’ve had my (correct title is Omega Speedmaster Professional) since 1983. Why do I mention “correct title”, well, The Lusso and export are “manual” lever machines. The original Speedmaster Professional is also “manual” wind. No gravity in Space for Automatic winding watches. Omega has leveraged for profits the Speedmaster name and made ones that are “Automatic” with internal weighted flywheels. Also, careful with the stop/start because mine broke the tiny clicker pin and it floated inside the movement. Watch repairer didn’t want to touch it and 20 years ago wanted me to send it to Switzerland for repair @ $500 I tackled the job myself and never ever will I do a Chronograph again. Regular watch like basic Rolex or otherwise ETA movement, no problem.
Good choice you made.
I have drilled a hole in the side of my PV Lusso, and i now adjust the pressurestat every time i switch beans. I currently have it all the way up to 1.5 for some extremely light SO beans from China, but immediately prior to that i had it down close to 1.0 for some Italian espresso from a wood-fired roaster. I did try the pressurestat mod when i first got it, but it was extremely hard to find the correct gauge connectors that still fit under the lid. Now I just have the machine switch on with the steam wand slightly open, so the false pressure bleeds out and it still gets up to temp. Obviously you then have to pull some water through to start the heat syphon, so it is definitely a machine that requires some user interaction and effort. The other mod i tried was to insulate the boiler, but the silicone sponge sheeting i used between to melt, so it was promptly removed!
I like the best coffee you can make.
Btw, whats the size of the porta filter?
Been looking at this machine, its the only dual lever maching i can find for home use
❤
Nothing on top, its only a cup warmer for dry, empty cups!!!!
I appreciate the videos, helped me decide to go with a PV lusso 2 group vs the export. Your videos are great. I live my local roaster and they ship free w 3 bag purchase. Royal Mile Coffee Roasters in NJ can work magic w the bean! Keep making videos, I'm loving PV lusso, its a nice compliment to the e61 I have.
Hi, I am looking at your videos. Would you elaborate on the Boiler Pressure you have fine tuned? How to take apart the cover, and explanation for it. BTW GOOD JOB!
Hey ! What do you think about the new Londinium Vectis ?
I sent you a link on how, after 15 pounds of force, there are diminishing returns for the tamp. Anything over 35 pounds of force is way too much. 15-30 pounds is ideal. Consistency is most important.
I did a dopamine reset few months back... highly recommend. I was shaking the first few hours, and the next day, I was just "off" days later. Things were so much more beautiful and tasted amazing. Check it out n let me know if anyone decides to try.
You should see the ballistic watch by I believe 5 11. It can be used to give ballistic info for a sharpshooter.
Liked and subbed. ❤
I roast my own coffee beans at home and this past year I have really began to understand the science of coffee roasting and brewing. Resting coffee is mandatory. This winter I would let my coffee rest on the kitchen table for 2-4 days and then put the beans in a air tight container with a 1-way valve. Thank you for the videos. I am looking at buying my first real machine. I hope we communicate in the future. Thank you again. Best wishes and many blessings.
I saw you secure the portafilter while you pull down. What lead you to this as part of your routine?
Honestly, sincerely great video! Have been researching for upcoming La Pavoni purchase and this really eased some doubts. that being said, are we just not talking about the swastika logo or....
Thanks, that was a very interesting video. I'm interested!
能幫我代購這臺機器運來台灣 謝謝希望你能幫我跟原場下單 我要購買 需要的您的幫忙
Some people are so lucky to be able to drink more than 1 cuo of Coffee a day. Decaffinated Coffee still contains a tiny percentage of Caffeine so I whom suffer from chronic Insomnia cant even think of drinking any kind of Coffee or Decaf after 2 PM
Great video but i don't agree with the Fellini moves, especially with the type of roast that you like, which means less than 1:2 ratio You don't need so much water, but would be enough even for lighter roasts I have a pavoni, and i see too many people make coffee that it's under and overextracted the same time These machines can be on par with the best commercial machines, just like synesso hydra MVP that we had in the cafe i was working, but you have to use them right and to have knowledge about coffee extraction
My Sama is brown, so it never looks dirty LOL
I like the vid but the voice overlay on the video which clearly isn’t aligned is distracting. Your hands are all over the place and not anywhere close so what you’re saying.
Love the setup. Going to make some new videos?
Thanks for this! If you were pulling a double shot with this machine, do you simply add more espresso in the basket and depress the lever another time, or do you do this whole process twice? Thanks.
I think you should worry about your pronunciation of the word “lever” before worrying about the pronunciation of the manufacturer’s name.
Well made video and I like your lever technique also. 👍 How does the Cafelat Robot compared to this lever machine for a lot less money?
P.S. what is the name of the lever machine that you used here?
Clear and good video. 😀 Have you tried the cafelat robot with the Bellman steamer as an entry level lever machine?
Why don't you make new videos anymore????
