    Good to see that you've returned.
    For our morning espressos and cappuccinos, we routinely use both Lavazza Super Crema and Kimbo Napoletano. The Kimbo is a definite our favorite for the lever machines.
    Ristrettos are done on the lever machines and typically the steamed milk based beverages are done on our E61 machine. My preferred go-to machine is my Ponte Vecchio. Our grinder is a Niche Zero, like yours. although I additionally use a bellows to insure complete emptying of the Niche Discharge chute pathway.
    Later in the day, I can experiment with different lighter roast single origin beans on the Ponte Vecchio Export or on our La Pavoni Esperto. The typical brew group temperature of the PV Export is about 195 F (about 90.C) after 30-45 minutes preheating and a single flush before mounting the loaded portafilter. If I do several flushes and monitor the brew group with a handheld digital IR thermometer, I can bring the brew group to 202-203F (about 95C) which is perfect for single origin lighter roasts.
    The PV gives amazingly consistent beautifully tasting espressos, more so than the La Pavoni, which takes more effort and attention to detail to produce great consistent shots, or at least in my hands.

      I could not agree more. Lavazza is a great everyday bean and I've even had some guests prefer it in milk drinks to the higher end roasts. I think the consistency of the Ponte Vecchio is its strongest feature. It does make creating great tasting espresso easy. Every time I feel I should get another E61 machine I taste what I can do with the Ponte Vecchio and question if I really need one. I don't make milk drinks often -- usually just for guests. I prefer espresso and Americanos.

    hahah interesting idea, I just walk down the road to this Italian place that doe snot do espresso very well and get a cheap espresso to remind myself how good I have it.

    Nice video,you’re right older coffee dries out and goes thru quicker ,take into account when grinding. Grind size is important on a lever machine too fine and it will clog the portafilter then you have to wait a while til the pressure goes down in the basket,buy some cheap beans and experiment grinding to the finer end and you will be pleased with the result.I prefer levers so much more to dial in to your own taste. Mine is a Profitec pro 800.

    I sent you a link on how, after 15 pounds of force, there are diminishing returns for the tamp. Anything over 35 pounds of force is way too much. 15-30 pounds is ideal. Consistency is most important.

    I actually love lavazza super crema... My principle is, if it taste good and enjoyable to you and brings you somewhere for that moment, that's good enough.
    If that happens to be expensive specialty coffee ok
    If it happens to be lavazza hey you do you !

    it's a great bean. i use it all the time on my pavoni. by the way. "double z" "ZZ" you prnouce it like "PIZZA" not" Lavaza but something like, Lavatssa"
