That looks good. Going to smoke a loaf in a couple days. I seed the peppers and soak them in sugar water for the day or over night to help with the heat. Tames them down nicely.

Hi, Ry. Like you, I use chipotles in adobo in a lot of my cooking. Quick tip - use a mini food processor or an immersion blender to chop the entire can of peppers and sauce and store in a small tupperware in the fridge. Then when you need a tablespoon or two, just scoop out what you need. No separate chopping or stained cutting boards. Great looking meatloaf.

Looks great,I love the smoked meatloaf, probably my beef product I like to smoke. This has got to be the most plain meatloaf I’ve seen anybody make,I throw so much in mine sometimes but always onions and bell peppers.I might just have to try one this plain it’s going to be a warm week.I just did a smoked meatloaf with ground turkey last week and nobody picked up on it.I usually use 2-3lbs ground beef with 1-2lbs ground pork but ground pork is hard to find right now in my area.If you like ground turkey you might try it,it’s probably my favorite meatloaf I make and it’s the only meat I use in my chili now and nobody is the wiser. But that is a good looking meatloaf.🔥👍

I really like to make stuff like this for week in advance. Let it rest on the counter then wrap it and refrigerate it without cutting in to it. Admittedly this isn't ideal for everyone but the reheated product is much better than it would be otherwise. The other option is to eat the entire thing while still hot. Win/win, imo.

I've loved the smoked meatloaves that I've cooked on my Big Green Egg in the past. Sadly the rest of the family isn't a fan of the "smoked" part which surprised me since I felt it added a nice flavor to it. I was surprised you didn't rotate the tray so the other side would be closer to the heat source. But when it cut into it, it didn't seem like one side was cooked more than the other so I guess it's not needed.
