I made this today. It was wonderful. I think I will increase the time uncovered for a little more smoke but I will definitely make this again. I couldn’t find a Fresno chili 🌶 so I just added a couple more chipotle pepper in the food processer with the carrot onion and garlic. The glaze is so good. I have a question. In Alton’s original meatloaf episode he claims that any more than one egg is too much and will gum up the works in the recipe. He goes by 1 egg per pound. What made him change his mind?
It is positively impossible to not like, or at least respect him. The man has produced nothing but wholesome quality over his decade long career and always remained authentic.

Makes:
12 - 14 servings
Glaze:
2/3 cups of Ketchup
1/4 cup Tomato paste
2 oz Chipotle peppers (out of a can)
1 tsp Cocoa powder
Mix ingredients
(2/3 will go into the Meatloaf, and the remaining 1/3 on Top)
Set 1/3 aside
6 oz. Barbecue Potato Chips (Thick, ridged kind)
Pulse in food processor until like a heavy breadcrumb
add on top of the 2/3 of the glaze mix
Next, add the following into the processor,
1 onion (looked white)
1 carrot
3 Cloves garlic
1 Fresno Chili (like a jalapeño, only hotter)
Process about 10 times
Sweat these aromatics in a pan on medium-low heat with some
olive oil,
1 tsp Kosher salt
1 tsp dried sage
Once that has browned and softened, you put that in the bowl with the glaze mix and potato chip crumbs
Meat Mixture:
1 lb ground sirloin
1 lb ground Chuck
1 1b ground pork
3 eggs
Poke and fold all of the above with super clean hands / fingers
(You DON'T want to squish it)
Put on aluminum foil,
Really compact it as you shape it, or else it's not going to slice well (it will crumble, and you don't want that)
Wrap it up
Make holes in bottom of foil (for rendered fat to get out)
Let sit for an hour
Smoke (he "likes hickory, oak is olay, too") at 250° for about
45 minutes
Put drip pan on rack right below
After the 45 minutes, unwrap the
Top of the foil so that the Meatloaf is now exposed.
Brush on that last 1/3 of the glaze.
