What pans work on an induction hob? U-Select Short Shots

  • Induction is quickly becoming a staple of many kitchens as the catering and foodservice industries realise the potential cost savings over time and the reduction of heat in small kitchens the technology can bring.
    But many professionals are still confused on what pans you can use for the hobs - and worry the technology needs ‘special’ pans to work. This is understandable if you’ve never used the tech before, and believe me, you’re not the only one!
    Don’t worry, it’s actually very simple:
    Induction uses electromagnetic energy to create heat - this is the reason it is so efficient (more so than gas and electric hobs) it heats the pan directly. This results in quicker heat times, less heat in the kitchen and less opportunity to burn yourself on the hob!
    But to work the pans you use have to be magnetic - or made of ‘ferrous material. So if a magnet is attracted to it, it will work.
    This means that two main types of pan WON’T work:
    Copper Pans
    Aluminium Pans
    Everything else should work, no problem. As long as there is some iron or steel in the pan, it will heat up like a champion, easy as you like.
    We’re often asked if a more expensive pan works better and the answer is no. If they aren’t copper or aluminium they will work fine. Buy the pans that you like using based on your preference and budget and away you go!
