  • This fancy Chinese restaurant in the ritzy Ginza district of Tokyo serves a very fancy dish.
Ten types of mushrooms boil in the Chinese hot pot - including the bamboo fungus, an expensive delicacy that’s popular in China.
Gozenbo, Youka Jo / The bamboo fungus is called “the queen of mushrooms”. It’s a very rare kind.
The species is considered to be as rare as shark fin.
Cultivating them in Japan in not easy, so the available ones are mostly dried ones from China.
A mushroom manufacturer in Gifu Prefecture, central Japan, might spice things up. They succeeded cultivating these fungi.
The luxurious mushrooms are being grown in this greenhouse.
No wonder they're also called the veiled lady. A delicate lacy "skirt" hangs from beneath the cap.
They start off looking like an egg.
But the harvester says it takes only a day for the mushroom to grow this big.
This video shows the veil growing out in ten minutes.
Bamboo fungus grows among bamboo forests, and is usually very sensitive and weak.
The manufacturer says it was difficult to grow them in Japan.
Kentaro Hosaka, National Museum of Nature and Science / I think this is the first success in mass-cultivation of bamboo fungus. Differences between Japan and China - including climate differences - probably made it difficult to cultivate them.
Haruka International spent nearly 10 years on research until they accomplished the nation’s first artificial cultivation of bamboo fungus.
Shinkichi Kikuchi, Haruka International / Bacteria and viruses are pathogenic to mushrooms, so we needed to make a strong fungus. I think that was the key to success.
Selecting strong fungi and growing them enabled mass cultivation of the mushrooms.
Customers throughout the nation will be able to get a rich mushroom experience, once the delicacy starts being distributed next July.
