    This is how you get people to eat more vegetarian foods - by making dishes that taste nice so they become part of the regular meal rotation. Trying to guilt people into doing it doesn't work.

      @@JesusIsLove7777 People need education, not brow beating, the OP is correct. It's a very daunting prospect changing your lifetime habits and going against what everyone else does. Telling people they're bad isn't helping anyone, especially the animals.

      @@JesusIsLove7777 a) I wasn't making excuses and b) raging at people that meat is murder etc. is very counterproductive and makes people look like jerks. Meat tastes nice, it hits a primal spot that doesn't respond to moralising or dubious arguments.
      If you want to convince people to eat more vegetarian food, or even food with a lower proportion of meat, then you do it by producing recipes that taste nice, and are convenient easy to prepare. Brain agrees food tastes nice == more of that food in future please.
      Even if you convinced everybody to eat a veg dish once a week through choice, or reduced the meat component by one less portion then it's still a %14 reduction in consumption overall.
      That's the only psychology that will work. Moralising and PETA-style idiocy won't.

    My husband bought me the book for my birthday in January. I am LOVING IT! I've made so many of the recipes already but tonight was the first time I've made this dish... It is my favorite so far. Absolutely delicious and so easy to make. Jamie, you make me feel like a pro chef in my own kitchen 😁

      Cornstarch slurry will also thicken it for the fraction of the price and without introducing other flavors.

      @ Zoe Taylor. How did you become a veggie? I eat more vegetables, but I do eat lean chicken, fish, sea fruits and eggs. I am 1 m 66 cm, 57 kg. I run 15 km, do 80 pushups and stretching. Obviously, I have a small size but need a certain diet for my moderate athletic activities. I have increased my milk consumption to 1.25 litres to completely replace the red meat. I can bypass the chicken, fish and sea fruits. But I cannot find a good substitution for the eggs, which is a very good for the heart and excellent source of protein? I would like to know how you made the transition. Thank you. (I have sent the same post to Suade Trinity).

    Add some dried mushrooms as well, use the steeping liquid instead of the water at the end. More mushroom flavour

    I was brought up when meat was still an expensive thing we had one a week, like a classic roast. My mother was an excellent veggie-cook and until today, the base of all my meals are veggies.

    I'm from another country, but your cooking is the best.
    I'm desperate to be healthy, but I think eating is important. Both of my parents had dementia, so I quit my job and took care of them. Last year, they both passed away after 3 months. It was stressful. My parents passed away, and my body and my heart ached a lot. I got a brain aneurysm on my head and two brain aneurysms. I even had hypothyroidism, so I suddenly gained 15kg. I have to diet. Anxiety disorder Panic disorder I still suffer from insomnia. It's been a year since my parents died, but I'm still in treatment, but it hasn't been long since I started again. I started TH-cam, took a walk, and traveled because I had the courage to share and communicate. Now I want to be healthy. I hope everyone watching this video is healthy. Take care of your health first.

    Be warned: Only - and really only - flame your dish when you are absolutely sure your fans are clean. Most types you'll find in normal homes will have cloth filters to soak up grease, if this catches on fire you're gonna have a big problem. Only do this if you really know what you're doing. IMHO this is advice which is far too dangerous to give in a video aimed at unprofessional cooks in normal kitchens.

    Tastes great! I added some Worcestershire sauce to the shrooms, added Sherry instead of whiskey and pasta instead of rice. Will be making this one again! :)

      Just to let you know in case you're vegetarian, Worcestershire sauce has fish extract in it. If you're not veggie though and just trying something new, doesn't matter (a little fish extract doesn't matter that much)

      @@majo3423 hi, the grocery stores here sell cornichons as well. You should be able to get them easily. I am just surprised to hear of cornichons, pickled onions, and capers added to stroganoff but I guess that's why he is a chef and I am not. 🙂

      Soak about a cup of cashews in water for a few hours. Drain and rinse them, then blend with water to make a cashew cream. Would work great in this.

    Do not put the fan on when you’re flaming a dish. If the flames get in the fan the grease in there could catch fire

      Me too. I always add Dijon mustard to any Stroganoff. I can really recommend Halloumi Stroganoff if you haven't tried it! :)

      I use stock, although it won't taste the same, I find it gives well-needed substance to any dish requiring alcohol. Note, you don't have to make it too salty though (:

      best way -- I was pescatarian for about a yr, adding increasing amounts of fibre-rich food -- no digestive issues; wasn't trying to lose weight but dropping 10 lbs still getting all nutrients. Jaimie's taken a hit recently, which he doesn't deserve -- definitely bought the book to support the cause; really good ideas in there!

    To make it vegan one could simply add some soy cream or some smooth cashew butter mixed with some water. A dash of soy sauce or tamari is always amazing with mushrooms...it just boosts the umami flavors.

      I've made it with oatly cream before (their creme fraise tastes quite like yoghurt) and it's perfect. Would recommend to people who can't have soy, nuts or peanuts

    I’ve tried this recipe and I liked it so much I even tried it out on friends who loved it , easy to make and very tasty . I would consider myself a meat eater mainly but quite often if I’m having Indian or Chinese food at a restaurant or from a takeaway I’ll go for the vegetarian option as the Indians and Chinese do the veggie thing so well .

      Maybe a steak served with it..that's what I will do or even a piece of chicken. Not vegetarian here at all but I am cutting back on carbs and sugar...so..no alcohol will be used when I make this. I just ordered the book. I have made the upside down pizza twice now and it's wonderful with the puff pastry and without! It goes well with meat on the side too.

    Hi Jaimie always wanted to adopt you which would have made your real parents very unhappy:) I admire you for the same reason I respect the late Tom Petty; you don't back down when you believe in something. I have been a total foodie all my life; I was born in Canada but my Dad lived in Rome for several post-WWII yrs and I spent a year in Siena so I love your approach to Italian food. I went vegan --- healthy whole food -- for ethical reasons and also an approach to health. There will always be a lunatic fringe in the best intentioned movements -- hope you, like my sis who has a significant presence online have hired someone to deal with trollers. Just keep on doing what you're doing! You are a delight and inspiration; made this recipe; was awesome -- love crème fraiche, lazy, no accents-- actually easy to make vegan 'yoghurt' with almonds some lemon juice a couple of probiotic capsules and yoghurt setting on instant pot -- make a lot of firy curries so cools things down … or acceptable substitute for tztsiki sp making greek or middle eastern food. Sorry for maundering on, all the best!

    Nice! I cook this a lot but never dry fry the mushrooms first...will be trying that tonight. I usually use veg stock instead of plain water and I always add a diced chilli to bring a bit of heat! Works perfectly!

    Interesting addition of the pickles there. Often, when I'm doing a pasta sauce or Quorn mince and onions, I will add a splash of pickled onion vinegar for a nice tangy vibe.
