How to Clean & Cook Banana Stem

  • This video shows how to clean and cook Banana stem. banana stem is used in South Indian vegetarian cooking. It is highly nutritious due to its high fibre content. Banana stem juice is particularly useful to flush out toxins from the system and helps to reduce weight.
    Ingredients
    Banana stem salad
    Peeled and chopped banana stem 1 cup
    Salt to taste
    Oil 1/2 tsp
    Mustard seeds 1/4Tsp
    Urad dal 1/4 Tsp
    green chilli 1 chopped
    Lemon 1 (juice)
    Coriander leaves
    For banana stem stir fry/ portal
    Peeled and chopped banana stem 1 cup
    Buttermilk 1 Tbsp
    Oil 1 Tsp
    Mustard seeds 1/2 tsp
    Urad dal 1/2 tsp
    Green chilli 2
    curry leaves a few
    Asafoetida/hing a pinch
    Haldi/turmeric powder a pinch
    Salt to taste
    Soaked split moong dal (yellow lentils) 1/2 cup
    Grated coconut 1 Tbsp
    coriander leaves a few

    Gita Ma'am... a couple of weeks back tauktae cyclone brought down a banana tree my friend's backyard. They dont eat the stem so they gave the entire stem to us. Since I had lots of banana stem, I tried 3-4 recipes over one week. The best, easiest and yummiest of all the 4 recipes that I tried was your poriyal recipe with moong dal. It was light, nutritious and tasty. Thank you for taking efforts to teach us with all the tips, tricks and with so much detail. 😘

    I never knew we could eat it raw too. I tried both your receipes today it was very tasty. My hubby too liked it. I bought this stem after 7 years. I had made it earlier the taste was pathetic so I never dared to try again. This time my hubby bought since it's been years n the receipe was yumm. I'll regularly buy from hereon.     I am dying to try this recipe. I live near a large Indian community and do all my spice, fresh veggies and legume shopping there.. fresher and less costly. I found the banana stem there and wondered "What do you do with this?" Since I love to try new things, I researched a recipe and came across this one. In addition, in my Gulf Florida home I have a real banana plant which I often ask my husband to prune down throwing out the stems killed me as I knew there was something I could do with them. Now I know. I use the leaves to make Cuban Tamales with the banana leaves. Now I have a great Indian recipe. .Thank you Gita, I am following you now!!

    We in Assam use only tender saplings for the recipe. We just finely chop the inner core of the sapling. Add lentils or mung dal. Put in cooker to boil. Then tamper with Jeera,dhaniya Onion,garlic, chilli etc etc.
    We also use another item of banana fruits. Outer cover of banana is sun dried .Then we burn and collect the Ash . When needed it's used by mixing the Ash to some water to release the alkali to water . This water is filtered and can be used as substitute for cooking soda.

      @@pv3293 cutting process is same.we used to soak it in saltwater.for tadka cumin seed and bay leaf.proportionatley jinger paste cumin paste and onion paste is needed.frying all these ingrediants we have to add strained and smashed banana stem adding salt half spoon sugar and ghee atlast.some small pieces of potato and overnight soaked chickpea also can be added.thank you for your request.

    Good recipe. Geeta Akka .my child hood days my mom was preparing. It's favourite of my father. He only chopped that 🍌 stem. By applying coconut oil for fingers.

    How long do we have to soak the chopped stem in buttermilk before we eat it raw or cook it?
    Also , please advise on how to differentiate and choose a fresh, tender stem from a tough old one.

      No waiting .. we just keep it in buttermilk to prevent discolouring due to oxidation . You can see by touch , one which is not fibrous at the open end

    In the above two sentences, how " being financed " and "has been financed" makes difference in the meaning ???
