Lemon magdalenas (Spanish muffins)

- Magdalenas are sweet, light, and fluffy Spanish cakes, similar to muffins. This time, let’s make soft and spongy magdalenas with lemon flavour. For an even stronger lemon flavour we can drizzle them with powdered sugar and lemon glaze.
Ingredients: (makes about 15 magdalenas)
250 g (2.1 cups) all-purpose flour
8 g (2 tsp) baking powder
Zest of 3 lemons
50 ml (0.2 cups or 1.8 oz) lemon juice
75 g (0.3 cups or 2.6 oz) sour cream
200 g (1 cup) sugar (white)
3 eggs (room temperature)
125 ml (0.6 cup or 4.4 oz) olive oil
1 tsp vanilla
A pinch of salt
