Good morning Mrs. Stephanie, I very much admire all your baking talent! I was wondering if I could make a cake out of this recipe and if so what pan size would be good?
To make this or similar coffee cake/ muffin recipes more digestible and just as flavorful, I replace the eggs with a chia seed gel I make soaking 1 part chia seeds to six to eight parts water for 10 minutes. For example , to replace 2 eggs, you could take 2 teaspoons of chia seeds mixed into 12 teaspoons water (or 4 tablespoons). Then you can cut the amount of butter in half and replace what you cut out with an equal amount of unsweetened applesauce. You can also replace the sour cream with apple sauce and to give it more flavor, I always double the spices and usually add allspice and ginger in with the cinnamon. Lastly, although the streusel looks pretty, you'll get all the flavor (and even more because none will "fall off the top"), if you just mix it in to the batter. You end up with a golden brown cake like creation that tastes fabulous and you'd never know it wasn't loaded with butter and didn't have eggs or a whole bunch of yogurt or sour cream.
I made these muffins yesterday and they were really delicious. Your right Stephanie, the cake is a lovely soft fluffy perfection. I was wondering if this recipe can be put into a 8x8 square pan. Have you ever tried that?

Hi Stephanie. Thank you for your great recipes . I made this but I had two problems. My coffee cake was softer thank yours. You used scoop but mine was like a cream. And streusel was not like powder . Where is my mistake
@@joyofbaking hi Stephanie, I am making these cupcakes for months now. I love them. Last time I put my bowl on scale and at the same time I used my brand new measuring cups. I found discrepancies in amount of flour. With measuring cup it turned out 50gr more. I decided to use it and the cup cakes turned out beautiful. Much better than before and more like yours.

Although this muffin is called a "Coffee" Cake Muffin, it does not contain coffee. In North America the name refers to how the cake is normally served, that is, with a cup of coffee. Its rich flavor and texture comes from adding sour cream (full or reduced fat) to the batter. You can replace the sour cream with an equal amount of plain yogurt. I've never tried storing the batter, so I don't know how that would work.
You can pre make the Streusel & mix the dry ingredients, that way you have to follow minimum steps to make it when required.
Can you show us how to make basic coffee sponge cake by using without measurement tool at home on the next episode????

Madge Brown you can always substitute granulated white sugar with stevia. Stevia also has an “in the raw” which I think is the brown sugar version.

Coffee cake doesn’t mean that the recipe contains coffee. It means a cake you would have with coffee.
