I finally did it. It was quite the challenge to improvise air lock but I managed to get nice and little bit sour wine. For next wine I already ordered proper air locks and containers. And leftovers from fermenting went straight to farm animals. Everyone was happy!

Yesterday I finished bottling the wine. I just tasted it and the flavor is reaaally good. So far the best homemade wine I've done. Lot's of thanks for the recipe.
FYI: I used normal yiest and it worked just fine, the flavor (at least in my case) was really good.

    Greeting from Indonesia.
I already start this recipe from 26 February, I followed steps by steps, and today I moved Wine from second fermenter to the bottles, I couldn't wait for three days to taste them, just take a glass after I put in the refrigerator, it smells great, taste even greater. Thanks for the recipe! Stay safe, stay happy and healthy.

Wouldn't using the banana skins change the flavour? It seems practical, though, to leave the skins in order to keep the slices whole.
Please do update @C Me @cuoredicioccolato. This is the time of year we have tons of bananas available at local markets in Mexico, even 3 kilograms for 1 USD. I will eat half of the bananas and make wine with the rest.

Tried the Wine today after a total of 40 days of fermentation....
Turned out great.....its actually sweet and sour to taste.....reminded me a lot of the sour beers ive tried....

Thanks for the reply! So if i keep the wine away from direct light and in somewhat cold area like a basement, i can age it for as long as i want?
Cotes de blanc is a famous yeast strain which is known for fermenting to about 12% alcohol and it lets the wine have more fruity sweet flavours, so it is good for making fruit wines.

Also cap with an inch of sugar

Great wine recipes... Have already made a batch of grape wine... Russian Kvaas and ginger beer. It's been a week. Lets see how it goes.
Im also thinking of making pomegranate wine and fiery green chilly wine. Have second thoughts about the green chilli though.

2.is this banana wine worth to make?
