    Confused by your comment about the Blackstone... If the heat is too high on LOW on the Blackstone, just turn down the propane. It will get as low as you want. You just have to know how to properly operate your equipment. Each griddle is different and you have to learn it's quirks.

    You know, if you throw some Jamaican jerk sauce in your bbq mix, it’s pretty much Jamaican jerk chicken! Looks delicious, trying to figure out how to make jerk chicken on my new griddle, the foil pan cover makes perfect sense!! Thank you for sharing!

    Discovered your griddle top does a great spatchcock as well. Last night, I fired up the Big Green Egg to cook the chicken, it just wouldn’t stabilize after an hour, too much smoke! So I put the chicken on a baking rack, on the griddle, skin side up, burners on med/high, with the lid down (I have a converted gas grill) Made beautifully browned crispy skin in about 30 min, had to turn down the flame eventually to finish, it got so hot. 👍

    The secret is the dome and a timer. Preheat your griddle on high for 5 minutes. Once 5 minutes are up, turn it down to the lowest setting. Put down any cooking oil and or butter and allow it to heat up which does not take long at all. Add the chicken and what ever sauce and seasoning you want to use and cover with a dome. I usually add a tiny bit of water from my squirt bottle before covering with the dome. Cook for 15 minutes and flip. Cook for another 15 minutes. Allow the chicken to rest for 5 minutes and enjoy. This even works on frozen chicken. I've also included times below for steaks and hash browns.
    Steaks (any cut and up to 1 inch thick) = Under the dome for 5 minutes for well done, 3 minutes for medium and 1.5 minutes for medium rare on each side.
    Hash Browns (both patties or shredded) = 7 minutes under the dome on each side
    comes out moist on the inside but crispy on the outside with a golden brown color
    Fish (up to 1 inch thick) 6 to 7 minutes under the dome on each side.

    I enjoy your channel but you don't need to knock the Blackstone, it too can cook chicken. Do what you do and show you rock, don;t put others down.

      WOOOOOO.... I did not knock them. I simply threw out a challenge. Put your burners on max low and see if you can get BBQ chicken even close to what is produced by a Griddle Master Griddle Top. I get people everyday calling with issues they face with the Blackstone. I did not mention the issues. I am passionate about my product. We can do so much more, plus we are made here in the U.S. All the money BS is spending on ads and I have see ads using my Griddle Master name. There is a lot behind the scenes. So, as I stated, here is the challenge, 15 minutes, on low on your Blackstone. Try it. Bone in thighs and drumsticks. If you can do it. GREAT... If you can't (Mic Drop) Griddle Master out!

      @@GriddleMaster so let me get this straight. You sell steel griddle tops to fit any grill, correct? You don't sell grills. So, you have no control over the burners underneath your griddle. How do you claim any kind of temperature /cooking difference? Steel griddle, over WHATEVER burners, right? I call bullshit. Nice that you can convert a gas grill to a griddle, great, well done, but a low flame is low on ANY grill or griddle. The elements are no different. For you to somehow claim that the top makes a temp difference is disingenuous at best. You sell a conversion. Great. Don't claim that it can change the temp of a burner, when it can't. Physics dude. Steel over heat. Stop it. Sell your conversion, it looks good, but there's no room for nonsense claims.

    Low and slow on my charcoal grill without any flair ups. If your getting flair ups on a charcoal pit you doing it wrong. Indirect cooking is what you want. You get a wonderful charcoal flavor and if you add apple wood it even makes it better. You can't do that on a grill master. I also do rotisserie chicken and whole beef roasts medium rare. The problem is all you have is a over sized fry pan. Everything your doing can be done on the stove in a cast iron fry pan. I've looked at those grill master and decided to stick to my charcoal pit.

      The griddle top is seasoned by heating oil on the surface, this creates a barrier that is dark in color, but is definitely food safe.
