I had the exact same moment with my mom when I was making my first wedding cake for someone else! My buttercream broke and I burned my hand and I was completely losing my mind heading toward a meltdown - my mom made one lap around the kitchen and fixed every problem. She’s never been a professional baker. I have. 😅

make and decorate a full size cake, par-freeze it, slice it up, wrap each slice, store in freezer. pull one slice out, unwrap, let thaw in the fridge, serve. cake for at least 2 months, 1 slice at a time. this is what I do. 😊

This is just an idea in response to the pulled sugar - spun caramel is much easier to manipulate and very pretty. One could easily do thin caramel threads that look like clouds, or for more dimension, raindrops, to decorate a cake.
