I didn’t have enough toffee bits, halved the recipe, forgot to “halve” the egg white, the dough was almost too wet and sticky, it still worked, cookies taste great. I also couldn’t bring myself to make a “piping bag” and just scooped a spoonful of the icing onto each cookie - turns out totally the same. These are SO good.
For the poors (like me) 1½ cups/226 grams English toffee bits without chocolate (such as Heath Bits O’ Brickle) ½ cup plus 1 tablespoon/112 grams granulated sugar 1 teaspoon baking soda ½ teaspoon kosher salt (Diamond Crystal) 3 tablespoons/42 grams unsalted butter, at room temperature 1 large egg, white and yolk separated, at room temperature 1½ teaspoons vanilla extract 1¾ cups/224 grams all-purpose flour, plus more for dusting ⅓ cup/ sliced alonds
I only have access to an oven every now and again, so having a cookie that I can make when I can get to the oven and can keep until I can share it with someone without the cookie going stale before that is a godsend!! We can always count on Sohla for great recipes!
These are absolutely incredible and they are definitly a little better 1-2 days after baking. I made these for Christmas last year and they're coming back for 2022.

sohla is such a badass spinning that piping bag to take out the air gaps.. i was actually amazed with how perfectly the filling settled in!!!! such a cool tip! we love sohla!!!
