    My family moved to Gettysburg PA around 1970 or so. When mom did her weekly grocery shopping we would sometimes see Miss Mamie and I assume her secret service agent shopping too. My brother and I always made a point to say hi to her and she was always so nice to us. I still remember how elegantly dressed she was. Always a lady!

    This was my dad’s favorite cake that he’d ask my mom to make for him in the 1960’s, and 70’s. She called it “7 minute frosting “ or “boiled frosting” too. It’s like marshmallow cream. She’d sprinkle chocolate shavings over it or drizzle melted chocolate around the top edge of the frosting so that it dripped down the sides a bit .

    Pouring hot water over the cocoa powder is called blooming. It helps bring out the flavors in the cocoa.

    Hi Kevin and Ralph! I have really enjoyed being with you guys tonight. This icing is the same 7 minute icing that my Mother and all southern women would use to ice their coconut cakes when I was growing up in Georgia. Good memories! I hope you both enjoyed the cake. :-)

    Love this, and we have an Ike rumor here in Palm Springs. It seems Ike went missing for a day while vacationing here. The press said he had a dental emergency, and local papers mention the dentist here in town. At the time everyone "bought " the story, however there was never a dentist in town by that name. So, here's where it gets interesting, many say Ike was driven, or flown to a local air base where he was shown flying saucers, and actually met beings from an alien planet, and signed a treaty with them. In any case, I hope he requested that chocolate cake when he got back to Palm Springs.

    Wow! What an in depth episode! Wonderful recipe and fascinating back story. At 42 minutes, this has to be one of the longest videos you two have ever made. But was very captivating and informative.

Haven't really done much with cakes, but I've been working on my Detroit style pizza out here on the left coast. I saw a video from a chef who grew up on the west side who never tasted it until he moved back after a culinary career in Texas. That's how provincial Detroit style was in the sixties and seventies. People out here don't know the magic of a Buddy's or a Cloverleaf.

    Oh WOW! That newspaper was printed two months before I was born! I was still in the oven! 😂...Definitely going to give this a try! Looks yummy! BTW little TIP: if one doesn’t have cake flour, it can be substituted by putting 2 Tablespoons of corn starch at the bottom of a one cup measuring cup and top it off with the flour needed to finishing making 1 cup... do this for each cup of cake flour needed. You’d really never know the difference 😉

    Just a little tip to share...if you don't have cake flour or don't want to buy it you can make your own. Start with 1 cup of all purpose flour remove 2 tablespoons of the flour and add in 2 tablespoons of corn starch. Also, it's the fat in the egg yolk that ruins the whites. The cake looks so good! Many years ago we used to get a lifestyle magazine with the Saturday paper that was full of great recipes that I saved for many years and sadly I have lost them all. Hope you do some more of these old recipes.

    Oh that background music playing on the hi fi... too fun. Back in the day, my mom had our huge counsel (in stereo! Imagine that...) radio/turntable combo set to the station that played those strings instrumentals 24/7. Even the dentist office played that music. ( Growing up, us kids discovered rock and roll stations on the dial when mom was out on an errand, and boy could those speakers put out! We dialed it back again, of course...) The cake looks great. LOTS of steps and effort to make, of course...(no wonder boxed cake mixes became such step savers... but not as tasty as from scratch.) Like the 'old newspaper recipes' idea for your channel.

      Hi Red! I remember those big stereos in the living rooms. I always loved that instrumental music - we called it "elevator music." Detroit had a couple of stations that played it 24/7. This cake is a lot of work but worth the effort - we enjoyed it! Thanks!

    I read somewhere that reducing oven temp by 25 degrees and putting a bowl of water in the oven when cakes are baking will stop the layer from 'doming'. I think it was in one of my Wilton cake books.

    The frosting is called 7 minute frosting FYI it was used to ice many cakes back in those days
    My mom loved that frosting and made it many times

    This is one I've never seen. I will be making it soon. As a farm boy ( 64'-71' ) in Central Minnesota baking was gender centric so grandma would hold off baking her staples all week so Sunday after church she could teach me everything she could. I've got most all her recipes that survived time and written, but most are ingredients and her baking style is memory. It's funny when I read her handwriting I here her speaking. I've got a Rhubarb cake recipe she famously made I'll take a picture of and email it to you.

    According to all of my cookbooks, you put the tablespoon of vinegar in the measuring cup THEN fill the cup to the 1 cup line…then let it set 5 minutes…..then…..it is ready to add at the appropriate time. I can just smell it!

    That looks fantastic! Thanks for sharing!! I’m not sure if you said or if you know, but that frosting is called seven minute frosting. My mother had a recipe for that which I remember her using with a chocolate cake.

    I have never see glass cake pans. I understand when you bake in glass , lower oven temp by 25 degrees, Also one of the cake ladies on TH-cam takes her hand and mashes or flattens the cake layer when it humps up like that. I did it on a sheet cake and it looked so much better, I love that "white " kitchen. I agree if you have a hundred mixers , use em ! lol. Thanks guys and gals.

      Hi Fred! I've also heard that you should lower the temperature for glass baking pans, but I always forget. I've not had any issues, luckily. The glass cake pans were popular for a time - Pyrex, Fire King and others made them. Thanks so much for watching!

    You can make your own cake flour, am not sure of the proportions, by adding cornstarch to regular flour and sifting it!

    I made this cake this past weekend and the cake is indeed delicious. The icing was perfect when I put it on the cake, but after it set, it turned grainy. Would love to know if I did something or if that’s supposed to happen, but either way it’s a great cake.

      Hi Andrew - thanks for trying the recipe and letting me know! When making icing with granulated sugar, it will often have a grainy texture because the sugar doesn't fully dissolve. Another option is to use powdered sugar instead of granulated sugar (you need 1.75 amount of powdered sugar to 1.0 of granulated sugar). Glad you enjoyed the cake!

    Was it my imagination, or was that Hamilton Beach a little on the slow side? I have one from the 1930s and it's a bit slow and I never used it. But I love the sturdy Pyrex bowls it came with and use those often. They held up much better than the smaller ones to my Mixmaster, which disintegrated. I don't think they were Pyrex or heat-proof. Loved the cake and the making of it. My grandmother taught me how to make a cake when I was a kid, so I have some great memories of that. She also made coconut cake with that 7-minute frosting. She had a 1955 GE hand mixer that may have been the first hand mixer they ever made.

      Hi Jonathan! I don't know if the HB mixer runs slow - I would have to compare it side-by-side with others to be sure. I am famous for making a mess when I'm mixing, so I don't always run my mixers at super high speeds! The bowls are very nice and I like the HB mixer overall. Your grandmother had an early GE hand mixer if she got it in 1955. Thanks!

      The Hamilton beach mixer is working just fine! I have the same chrome model and the motor sounds just like mine! But I use my kitchen aid model 4c polished chromium model more than the Hamilton beach bill

      Also if you have vintage sunbeam and Hamilton beach mixers you have to oil the motors from time to time I have several repair manuals for sunbeam ge Hamilton beach mixers that tell how!

    Kevin, did the original recipe really call for unsalted butter? My vintage cookbooks from the 1950s never make mention of unsalted butter and I honestly don’t believe it was main stream available in stores at that time.

      Hi MrScottie68. No, like most recipes of this time, it just called for "butter" without any specifics. Generally, I always bake with unsalted butter, but I'm sure in 1956 most of the butter available contained salt. Thanks!

      Cavalcade of Food ......thanks Kevin, so I’m guessing that if you use unsalted butter in vintage recipes you should slightly increase the salt in the original recipe by say 1/4 tsp.

    Don't forget Cream of Tartar in place of lemon or vinegar and to stabilize the egg whites when you beat them.

      Thanks, Cyril! Funny about this recipe - it called for cream of tartar for the frosting, but not for the egg whites for the cake. Hope all is well!

    I never did the sour milk thing because for some reason it makes me feel like I'm cheating and I end up using buttermilk instead; but maybe now ...
    BTW a baker friend of mine says that if you place your cake pans on a pizza stone in your oven your layers won't get domes. Haven't tried that yet.

      Hi James - I know what you mean about the buttermilk/sour milk. This recipe called for sour milk, so I used it, but I enjoy baking with buttermilk. Haven't heard of the pizza stone method - I wonder if that would work? Maybe it evens the heat distribution across the bottom of the pan. Thanks!

    Those milk glass bake glass baking dishes can be a pain I am surprised he didn’t line the bottom with parchment paper

      I use a baking spray with flour and oil and I've not had anything stick in the glass pans yet. Thanks for watching!

    Cleaning out my pantry the other day I discovered a can of cream of celery and a can of cream of mushroom soup. I recalled that you used both of these in a recipe you did that I wanted to try and now I can't remember which recipe it was. HELP!!

      Hi James! LOL! I used cream of mushroom and celery soup in a lot of different dishes - not sure which one you might be thinking about. The cream of mushroom is in city chicken, Polish meatballs, and probably a few casseroles, as is the cream of celery. They are great ones to keep on hand - perfect for cooking with! Sorry I couldn't be more helpful!

      Hi Sixty Six. Yes, it does have one teaspoon of vanilla (you can see me putting it in at 12:00). It goes in along with the egg yolks. Thanks for watching!

    Putting hot water in with egg whites would make the whites set which wouldn’t be a good look for your icing
