This is by far the BEST Devil's food recipe I've ever used! I've been making it for years for both sculpted cakes and cupcakes. The High Hat cupcakes are always a huge hit! :)
Those have got to be the best looking brownies and cake I ever saw.My favorite cake is by far devils food. My mouth is watering! When I make brownies they never come out that perfect looking. Another great one, Martha.
those cupcakes look like straight from heaven🙏🏻🙌🏻👌🏻😍 a suggestion for the cake: try with grated hazelnut & almonds instead of flour.. and some dark couverture & marc de champagne. it wont be fluffy anymore, but very rich and tasty, almost like chocolate truffles😱😌

I tried this cake - from her “cakes” book, and i did everything by the book, but the actual cake density was horrible after it cooled down, it was more like fudge than cake- how did it turn out for you?
She should have used wet cake strips for outside of her pans, no cracks and no round puffed up crown either. Otherwise these look great. Not everyday you have one up on Martha, ha, nailed it!
I am very curious about the 7 minute frosting. I have a recipe where you do all the whisking while the mixture is on the bain Marie. But I find the recipe I use the icing is wonderful on the day of but the next day it has gone grainy. I am wondering if this method that you’re using keeps it from getting grainy the next day?

Speaking just from my baking experience, I’ve used coffee on many chocolate recipes I’ve baked and it enhances the chocolate flavor so I’m sure you could sub. I think you could use buttermilk but I find sour cream makes cakes more moist. I think it is because where I live you can only find lowfat buttermilk.

Martha the devils foo cake perfect as always however speaking for myself I loath and hate and wish that Milk chocolate had never been invented I wish I could discontinue it right now and that it would NEVER be made ever again lets throw that crap into an active volcano BARF I do however love DARK chocolate its the best I never use any thing else ever ESP BARF MC!!

May I ask why Martha coats the 9 inch pan with Cocoa Powder before the cake batter? Thanks for sharing the recipe, Martha!
She used cocoa so there wouldn't have any white marks from the flour. Plus if you used the cocoa will give it extra flavor.

For the devil's food cake you will need 3 sticks of unsalted butter, which comes out to 1.5 cups, or about 12 oz/140 grams.
