    Ive been making frostings for 40 years.. if you make it with a paddle you wont have air bubbles. I love the way you demonstrate your recipes though... Great job!

      I need to make black frosting for a Rubic cube cake. They say to add the black gel color to chocolate icing. Could i do that with this icing? Thanks

    I made this recipe and it was really good. It was perfectly buttery and chocolatey with a hint of salt. I recommend tasting it every cup of powdered sugar you use. I only used 2 cups and it was the right amount of sweetness for me.

    I see why you have sooo many followers...I've been cooking for over 40 years but I've never made frosting after the first time was a failure. Your teaching style, with great video and explanation as you go is amazing! i made a silky, beautiful icing that was divine! I used hazelnut creamer as I had no cream, a little coffee, five cups of sugar, and a couple dashes of cinnamon.....so delish! Thank you for teaching!!!!

    ½ Butter

    Seasoned baker here and made this last week for a cake, it really is the BEST chocolate buttercream! John is my go to for anything baked. So chocolatey, silky, smooth and not overly sweet.

      @@ShenZA6 I don’t think it’s too sweet and I’m not a frosting girl, but add the powdered sugar a little at a time until your desired sweetness. I will say this buttercream is nothing like you get at store bakeries, so much better. Try it, you won’t be sorry😬

    I'm a Virgo also and I'm also a perfectionist. If my cake or cookie are not to my liking, in the trash it goes! You gave me a great tip to get rid of the air bubbles.

      I'm a perfectionist too, but I'd never waste perfectly fine and edible food. Not being "to my liking" doesn't make it inedible. You could give your "fails" to someone else as long as they're good (just not "perfect").

      @@Romy--- yes you are so right, sometimes I do give my fails to my son to take to work and his coworkers eat it all! But when I get distracted by phone call, doorbell, making a diaper change for one of the little ones. Not enough flour, under cooked cake, flat cookies, over cooked cookies; I can't sell that, so in the trash it goes. Thank you for your input.

    The lengthy creaming gives the cocoa powder and powdered sugar time to properly dissolve so that the finished frosting is smooth, not grainy. Thank you, John, for teaching not just how, but why.

    First time ever, I decided to make a triple layer French vanilla white birthday cake
    used the recipe for choc. buttercream frosting I cut the powdered sugar down by half. It was excellent
    1½ Cups unsalted butter room temperature (339g)
    ½ Cup unsweetened cocoa powder (50g)
    ¾ Teaspoon salt
    1½ Teaspoons vanilla extract
    6 to 8 Cups powdered sugar sifted (720-960g)
    6 to 8 Tablespoons heavy cream or whole milk (90-120ml)

    I just made this, it’s delicious. Thank you for saying that I can add however much icing sugar I want. So liberating. I genuinely thought I had to add the amount specified in recipes. I used much less and it tasted gorgeous.
    I was too lazy to do the trick for the air bubbles lol. Guess what, air bubbles all over my cake. Serves me right. I’m new to icing cakes this size so still learning and I will definitely take it onboard for my next try. Thanks for the video and recipe ❤

    I recently subscribed to your channel. I was asked to bake oatmeal cookies for work and I hadn't made cookies since middle school home-ec. My coworkers loved them! Most people bring store bought cookies and they could taste the difference in your recipe. I made your chocolate chip cookie dough today and froze the little dough balls like you recommended. I ❤ your channel and your sense of humor. ( I used a sifter and sea salt. So many great tips in your videos.) I do plan to try more cookie recipes!

    I have the pastry cutter paddle and it works great for this. It's designed for cutting butter in. I'll try it when I make this and let you know how it worked. I'm a total Virgo but have Leo tendency's because I was born on the cusp.

    I’ve never cared for the taste of butter in chocolate frosting, and certainly not three sticks worth. LOL I always use margarine. I use one box of powdered sugar, 1/3 cup of softened margarine, 1/2 cup of cocoa, one teaspoon vanilla, a sprinkle of salt, and milk added to desired creaminess. This has been my go to recipe for over fifty years and it’s really good. 😊

    Great tips!! The sea salt is a nice touch to contrast flavors. I just made this using 3/4C of 72 %dark chocolate chips instead! It tastes great and the texture was still silky smooth from the melted chocolate! Yum enjoyed it!

      @@racheldavis5114 yes, of course! I've used it multiple times when baking, and they all turned out great. The only thing I would suggest is that if you use salted butter, don't add any extra salt to the frosting like you would when you use unsalted butter. It would make the frosting too salty. But otherwise, you sure can! 😁

If you want to make pink frosting that is natural, then you can try to blend some strawberries or raspberries, simmer them, remove the seeds, and then add them to your frosting. Since you want to use something natural to make a pink frosting, then I definitely recommend using those! They would make a nice color, and a nice flavor too 😋 😊

    Looking forward to your book! Have you ever tried melting 1/2 stick of the butter in the microwave, then stir the cocoa powder into the melted butter? I like how it 'opens up' the cocoa flavor, and it won't get everywhere when you mix it into the rest. I let the butter/cocoa mixture cool down before mixing it in with the whipped butter.

      You could put some espresso powder in with the cocoa powder to. Or add some coffee extract with the vanilla.

    I made this frosting this morning came out good I should have added a little more cream to make it smoother. Did realize till after piping ugh! But it still looked nice after the sprinkles! Thank you I will make again

    Just made this! So proud cause I’ve never made it before and I halved the recipe. At one point I had to just trust the process because it just looked like brown clumps but when it all came together, it was silky and delicious. Used it to frost some brownies 😊

    Have you ever used black onyx cocoa powder?
    It's amazing,!
    Baked goods are absolutely almost black, and frosting are super dark. And it tastes like Oreos! Great for Halloween goodies!

    i made this last night and frosted cake today. it is delicious and it turned out just like in the video. however, i regret using coarse salt. it didn't fully dissolve, but no big deal...it's just for me. i might use salted butter next time instead of added salt.

    I successfully made buttercream about three days ago after a few fails i decided to do half butter half shortening and whipper the butter after i whipped the butter i switched to the other piece i think it's called Patel and used heavy cream instead of milk and this my friend resulted in a successful victory for me and btw my apart is super hot so i used my butter straight out of the fridge

    Question: You mention making this recipe ahead of time (storing covered in the freezer, bringing slowly to room temperature, whipping it back up-paddle attachment, then pressing out the larger air bubbles). I love the tip of pressing out the air. If you know you are going to store it, can you omit pressing out the air bubbles the first time, knowing you are going to do it when you use it (following the steps above)?

    I recommend using a whisk to mix then switch to a paddle to get it smooth once it is done.

    I made it but for 2/4 butter cube i add like 3 times more of Coco powder and it is heh rel chocolate butter, Yes I add suggar is so sweet😂🎉(Yes I froze it and make sandwich with strawberry xd) so good.

    How do you prevent cracking and rough edges when piping your frosting? Also: I’m intrigued by that round, copper, doodad or your pot rack. I am referring to the one that has a handle that goes to the center. Thank you.

      The rough edges can be avoided by adding more milk to the buttercream. At least, in my experience, that happens when your buttercream is too stiff :)

    I love Belgian chocolate and would love to make a buttercream frosting with that. Can I use melted Belgian chocolate? Or do I use powder and melted chocolate together?
