I have this beautiful old cookbook from a friend, and there are a few recipes for dandelions. Dandelion wine, tonics, a few others but I'm not looking at the book and I don't want to say the wrong thing. But yes dandelions will be delicious this year. I found one a couple of days ago at the edge of the property with a root about one inch in diameter. She's going to be beautiful when she blooms. Already has nice green leaves. Take care.
