My next dream place to visit in Peru. I've already been to Pucallpa, Lima, Cusco, Machu Picchu, and the Sacred Valley. Colca Canyon is my next dream place to visit.

Yes you can do the hike on your own. You can make your own way to the trail head on buses and book your own accommodations online. We saw plenty of people doing it by themselves 👍
Probably the Salkantay if we had to choose. Colca is great but the Salkantay trek just has so much more diversity to it and of course you get the payoff of Machu Picchu at the end 😊 depends what other things you want to do in those 2 weeks but you need a minimum 7-8 days for Salkantay and Colca not including travel days. So could be a tight squeeze. If you have to pick one pick Salkantay for sure 👍
