Pandan Waffle (English Version of Bánh Kẹp Lá Dứa).

  • Thuy’s Belgian Pandan Waffle (English Version)
    In this video, I will show you
    three steps to make perfect pandan waffle. Pandan waffle is unique because it has pandan and coconut flavor. It is very crispy, crunchy, chewy, and soft. The texture is just right!
    We will be making pandan waffle mixture
    for pandan waffle!
    We will need 13 ingredients…
    1. 3/4 Tsp Salt
    2. 1 Tbsp Double Acting Baking Powder
    3. 1 Tbsp Condensed Milk
    4. 2 Tbsps Fresh Pandan Extract (or/and 1 Tsp Artificial Pandan Extract)
    5. 2 Tbsps Melted Unsalted Butter
    6. 2/3 Cup Sugar
    7. 3 Large Eggs
    8. 4 Cups Tapioca Starch: Take out 4 Tbsps
    9. 400 mls Coconut Milk
    10. 1 Tbsp Coconut Oil
    11. 4 Tbsps Corn Starch
    12. 1 Cup Glutinous Flour
    13. 1 Cup 2% Milk
    Instructions: 3 simple steps…
    Step 1: Mix Well All 13 Ingredients Together (Does Not Matter What Order)
    *Optional: Add 1/2 to 1 Tsp Artificial Pandan Extract to Enhance Color as desire.
    Step 2: Pour the Mixture Through Fine Mesh Strainer. This step is to help dissolve all the ingredients better. Use the whisk to stir to dissolve the crumbs. The mixture should look smooth once fully dissolved. Pour the mixture into a container with a pour spout. Let the mixture sit at least 20 minutes before baking.
    Step 3: Bake the Belgian Waffle. Always pre-heat the waffle maker 3 to 4 minutes before baking. Give it a good stir before pouring the mixture into the waffle maker.
    I used Cuisinart Waffle/Omelet Maker. Set on number 3 and cook for 3 minutes and 20 seconds. Best to consume right after baking while fresh, soft inside, crunchy outside. You can adjust the crunchiness and softness by adjusting the baking time. The more baking time, the more crunchy outside and less soft inside of the waffle.

    Did you use fresh pandan juice or use the green sediments from the bottom of the juice

      Use the bottom sediments, yes fresh

    Do you use a non-stick spray or melted butter before pouring the batter? If so, what do you use? Thanks!

      I don't but you can
      I have done both.
      We already have melted butter inside the batter so you don’t have to.

      When you use non stick oil spray prior to pouring the batter it will be more crunchy, it’s pretty good! Try both way with and without to see which one you like better
