I've been looking for this recipe like crazy. I used to eat this as a kid for street food. Thank you for sharing this recipe. It brings back a piece of my childhood :)
*I bought this to replace an old Sunbeam waffle **MyBest.Kitchen** and pancake maker that my parents received as a wedding present. It is very simple to use and makes perfect waffles. I followed the instructions and lightly seasoned the waffle grids before using it the first time, and my waffles pop right out without any sticking at all. The indicator light system makes very consistent waffles, just slight the lever to the doneness you like, pour batter on when the green light is on and remove when the red light comes on. I can make four large waffles in about five minutes.*
I tried it in pancake form. It was delicious! The only thing I changed was that I only used half of the recipe, took out coconut flakes, and instead of all coconut milk I used 1/2 cup of cocnut milk and 1/8 cup of regular milk. At the end, the pancake reminded me of banh bo but less bubbles, and chewy and more like a pancake. Thank you for the recipe!!
Made waffles today and its delicious. Although not crispy since my waffle maker makes it thicker, more like for Belgium waffles. Overall excellent recipe.
Hi Helen! I've enjoy every single recipes you have posted so far. I tried most of them already and it's a big hit with my family. Thanks for sharing your wonderful cooking with us. I'm def., gonna have to try this one too! Looks awesome! Thanks again! :))
Helen, do you know Banh Ong? I went back to Vietnam a couple years ago, and I finally spotted banh ong. I live there until 12yr old and never heard of banh ong until my aunt reminded my mom about it. I believe that it is not a new street food, I know it is a Khmer originated food and they used to make it in ong tre rather than now, they make it in metal materials. Still so good! Just wonder if you know and would think about making it in the future.
Thank you for the recipe! The recipe taste great, my daughter definitely prefers these over the standard waffle batter. I need to find a another pandan extract though, the one I bought says pandan flavor essence and it didn't even give turn the batter green.
I had this at a Vietnamese place near my work called Banh Mi Coda. Banh Kep wasn't even on the menu it was like a secret that only the regulars knew about. I am now addicted to these things. I tried this recipe and it was very close but mine was not quite the same as the ones from Banh Mi Coda. They make them crispy on the outside and very soft and chewy on the inside. The ones I made were kinda dry on the inside. How do I get them to be more chewy and more moist inside while still being crispy on the outside? I love these things so much I just want to master them so I can make them for the rest of my life.
Pandan is a tropical plant used widely in Southeast Asian cooking as a flavoring. You can use vanilla extract instead of pandan to flavor the waffles. Also, chocolate powder will give the waffles both the chocolate flavor and color. Instant coffee powder could be used to give the same result as that of chocolate powder. Helen's pandan waffle recipe is original. Variety of NATURAL flavors and colors can be added for different tastes :)
Hi Helen, thank you for all the great recipes! I don't have a waffle machine at home, is it possible to put the batter directly on a non-stick pan, like a pancake?

Many people asked me this question and I don't know how to answer!
Are the coconut flakes mandatory or optional?
I guess yes. But then you don't need to add baking powder anymore
Hi Helen. You video says 140 grams All-Purpose Flour but the below recipe says 160 grams. Which is correct? Also, is the melted butter added into batter or is used as brushing the waffle maker?
20g difference is not a big problem for this recipe. Butter is to brush the maker
