Mix 2 eggs, 4 egg yolks and 1 cup white granulated sugar with a whisk for 3-4 minutes. Pour mixture into stainless steel saucepan and whisk in 2/3 cup freshly squeezed lemon juice. Stir over medium heat with a rubber spatula for 3-4 minutes until it thickens. Take off the heat and add 1/2 cup unsalted butter and 1 teaspoon vanilla extract. Optional: add lemon zest. Hi which recipe do you use for macrons? I want to make them but I'm a bit scared to start heard so many things about failure but if i do, this is a good combination
I made a half recipe up with this and instead of sugar I used Xylo sweetener, which I blended up in the blender like a powdered sugar so that it would dissolve real easily. I also used a metal bowl that fit right inside of my Kettle with boiling water in the bottom of the kettle not touching the bowl so as not to have lumps. I think because of the Xylo I had to cook it about three times longer to get it thick. I also added just a little more butter 🧈😋. You really have to taste you in the a.m. to make sure it's sweet enough with the Xylo as I was very cautious and didn't put the full half amount at first and of course it depends on how sour your lemons are too. Thank you Tatiana for your wonderful inspiration and someday I'll try making the cheesecake as well using Xylo sweetener. 😊
@@taniapico2224 not at all, I don't mind eggs so I don't taste any, if you are over sensitive to the flavor you might but it is just creamy lemony goodness :)
I used it to make cheese cake and it’s Literally the best Lemon curd I’ve had in my life so lemony I used lemons fresh off our tree ( I did not add vanilla ) ❤❤❤ this alone made me sub, like , save ,share you name it!
So she said that she doesn’t like the texture of lemon zest but what I learned is that you can add the lemon zest and leave it to sit while you stir in the butter and then you strain it to get the lemon zest and it becomes beautiful and still smooth, but then it has that extra pop of lemony Flavor 😊

It’s supposed to be cooling off but I keep eating it! It’s wonderful warm. Hopefully I’ll give it a chance to get cool before it’s all gone. Thank you, that recipe is a keeper.
Made this recipe 2x. I’m planning on using this to fill a lemon ricotta cake. The first time I used a stainless steel pot and a silicone spatula. Tasted delish but had a strong eggy aftertaste. Second batch I used a glass bowl and did the double boiler method. Also cooked it a bit longer. It again tastes great but had a slight eggy aftertaste again. This is after using a ton of extract (2 tbsp vanilla and lemon). Next time I’ll try to follow a different recipe with less eggs.
Hi! I'm sorry the recipe didn't work out well for you. It's KEY to whisk the eggs and sugar together until the mixture ribbons. This will help combat the flavor the eggs. Also, make sure to use freshly squeezed lemon juice as this will further help with the flavor.

Hi! I've never tried making this recipe with syrup, but you would need the same amount. Since agave is less sweet than sugar, the curd won't be as sweet.
Just a tip since you don’t like the texture of the zest (I don’t either) zest the lemon’s, juice them, add zest to lemon juice , let zest sit in the juice overnight in the fridge! Strain it before cooking! The zest is where most of the lemon flavor comes from! Makes a really big difference!

You’re the cutest I love your energy!
Thank you so much!!
It would make sense that Sansa Stark would have the recipe for lemon curd
Right?! lol :)
Haha! Clever!
Can the same concept/ recipe be applied to other fruits like orange or berries??
This recipe works great with lemons, oranges, or limes. If you wanted to make a berry version, you could add some pureed berries to it later.
Best lemon curd and easiest recipe ever. Thank you 😁
So glad you enjoyed it!! :)
Super delicious! 😋 Just made this recipe. Easy and fast but I cooked mine on a pot I thought was stainless steal, it turns out it probly wasn’t because I got the metallic after taste. 😩 I will buy an actual stainless steel pot and will try this again. 🧁🍋🤞🏼
I'm so glad you enjoyed it even though the taste was off! It will be even better with a stainless steel pot! :)
I can’t wait to try this!! One question: Can I add lemon oil instead of vanilla extract?
You'll love it! and yes, you can definitely add lemon oil! :)
I love this recipe but I would love to use agave nectar, how much do you think I should use???? Thanks!!
Hi! I've never tried making this recipe with syrup, but you would need the same amount. Since agave is less sweet than sugar, the curd won't be as sweet.
@@TatyanasEverydayFood thnk you so much for responding

Yum looks delicious making your recipes soon will dm you drooling over my samsung galaxy j4 love your videos making me hungry Thanks Ramya
Thank you - enjoy!! :)
Thanks for sharing your tip! :)
So easy! Yes!
Enjoy! :)
Thankyou so much a great recipe and easy can't wait to use my lemons off a friends tree.
You're very welcome! Enjoy! :) Home grown lemons are the best!
I am going to try it. Wish me luck
