    Here’s a new week of easy vegan breakfasts for you! The meals is in this one are pretty good ones not gonna lie - carrot cake rawnola, vegan grilled cheese, savory oatmeal, a tofu berry smoothie bowl! Which one are you gonna try?

    INGREDIENTS:
    #1 Monday’s toast creation
    bread
    hummus
    ½ avocado
    a handful of black beans
    raw zucchini slices
    pickles, chopped
    sriracha
    also a muffin from this video (recipe comes up towards the end): • What I eat in a Week! ...

    #2 Carrot Cake Energy Balls / Rawnola
    1 small - medium carrot, shredded (~45g = 1.59 oz)
    ~8 soft deglet nour dates (~50g = 1.76 oz) (or another type of date but like around the same weight)
    a handful of walnuts (~25g = 0.88oz)
    6 tbsp oats, more if needed
    a pinch of salt
    ⅓ tsp of cinnamon
    2 ½ tbsp orange juice, more if needed
    also soy milk and berries for serving

    #3 Berries and Tofu Breakfast Bowl
    150g frozen raspberries (~1 ¼ cup) (5.3oz)
    1 black firm plain tofu (200g) (7oz)
    ½ tsp vanilla
    2 tbsp oats
    1 tbsp almond or peanut butter
    1-2 tbsp berry jam (or sweeten with dates, i did a mix of both in the video)
    1-2 splashes of non dairy milk, more to help the blending, if needed
    toppings of choice
    → this is super filling fyi, can also serve 2 as a “side breakfast” is that a thing side breakfast
    → also this is going to taste differently depending on what type of tofu you use - I used the plain organic one by the Edeka brand
    → if you think your tofu might have more of a strong natural flavour only use 1/2 a block (100g) to begin with and then see if you wanna add more :)
    #4 Savory Oatmeal - Mushroom Oat Risotto
    1-2 handfuls of mushrooms
    2-3 spring onions
    oil for the pan
    1 tsp vegan butter, optional but recommended
    ½ cup small cut oats (45g)
    1 cup vegetable broth (250ml)
    1 tsp flax seeds, semi ground or fully ground
    1 tsp nutritional yeast
    1-2 handfuls of fresh baby spinach
    topping ideas: vegan cream cheese, hummus, avocado, sesame seeds, hot sauce, grated carrot, cherry tomatoes …
    #5 Vegan Grilled Cheese
    for the “cheese” sauce:
    1 tbsp cold vegan butter
    1 tbsp corn starch
    ½ cup + 1 tbsp non dairy milk (140ml)
    ¼ tsp turmeric powder
    1-2 handfuls of vegan pizza cheese or add 1 tbsp nutritional yeast, won’t be the exact same consistency wise but still pretty good
    salt to taste
    1 tsp white wine vinegar
    also bread, vegan butter and steamed broccoli to act like this was a super healthy meal haha
    steamed broccoli + lemon juice + sesame seeds is actually heaven tho
    #6 Pumpkin Pancakes

    but subbed apple sauce for pumpkin purée and added ½ tsp cinnamon ✌️
    #7 Sunday’s Fancy Avocado Potato Tomato Meal
    boiled potatoes 4-6 smaller sized yellow potatoes, or however many you want
    oil for brushing them
    salt
    1 clove garlic
    olive oil for the pan
    1 large tomato
    seasoning of choice
    ½ avocado, mashed + lemon juice
    spring onion for the top

    Recently I’ve been loving a chickpea omelette!
    1. Simply combine some chickpea flour (I made mine myself by blending up dry chickpeas) with some water so that it reaches a thick/omelette like consistency.
    2. While you do that fry whatever veggies you want in a pan (i like onions, mushrooms, spinach, bell peppers, peas,...).
    3. Together with some spices and tomatoes (optional) add the veggies to the chickpea mixture and combine.
    4. Fry with some oil in a pan on medium to high heat for about 4 minutes on each side.
    5. Plate it with some hummus, tomato paste or guac.
    EDIT: I forgot to say to also add a flax egg to the mixture!!

      Yes, I am vegeterian Indian, we call this cheela and consume a lot of chickpea flour in our diet and also is a good substitute for any sort of sweet or savory recipes, and being a gluten free flour.
      Tip: instead of frying, you can add a bit oil by combining all the things you mentioned and make as a waffle :) ❤️

      marie hopefully, they don't.. make sure it has oil in the batter. And grease the waffle maker with little oil.

    this is not rly a breakfast idea but its my way of making tofu taste rly good in wraps:
    (makes two servings)
    cut up a green onion, heat your pan and add some oil. cook the onion until translucent and then CRUMBLE your tofu into the pan in big chunks instead of cutting it into cubes. add seasonings (I used 2 tsp. of soy sauce,1 tsp of cornstarch, paprika, curry powder and salt (or fries seasoning), onion powder, regular paprika powder) and let the tofu cook on medium or medium high for idk 5 min and ur done :) TRUST ME ITS DELICIOUS

      @@smudge8882 on an omelete (you can do chick pea omelete), spinach on toast, savory muffins with vegetables... also fruits like tomato, avocado are good on toast. I'm not a dietitian (aspire to be one) i just really like nutrition

      @@irinaberne8668 tell me more about this crumble, it has different meanings in diff parts of the world and I'm trying to understand. As far as the oats, it's the texture that's weird to me, but maybe one day I'll work up the courage to try it. I know being vegan gets you to really flex your chef skills to keep it interesting

      Biji Smythe it’s like a casserole dish with a topping made of oats, flour and oil. They’re usually sweet made with apples, berries etc, but I’ve tried the one with lentils, mushrooms and leaks. Yeah, being vegan definitely challenges all your cooking skills and I love it!

    I HAVE A TIP!!! so for thicker smoothies or smoothie bowls, freeze whatever fruit you want, bananas, etc. but if you have mango accessible to you, USE IT. they make any smoothie so thick and creamy and you don't have to freeze them. They also add a natural sweetness so you don't have to add dates or anything else. So add your frozen fruit on top of the non-frozen mango and blend with maybe 2 tsp of water or milk and it gets so creeaammyyy!!!

    Recommendation for when making smoothie bowls or puddings: use silken tofu. The stuff is so soft it blends into a really creamy mixture, and the taste is a lot mellower than regular tofu so other ingredients cover it up very easily. When I want a treat I make chocolate pudding this way.
    12-15 oz of silken tofu (preferably firm if you have options, I recommend Asian stores if you can't find it elsewhere)
    ~5 tbsp of cocoa powder (adjust to taste)
    ~5 tbsp sugar or preferred sweetener (adjust to taste, I like sweet things lol)
    + optional 2-4 tbsp of vegan butter for creaminess
    good with fruit, berries, nuts, or just on it's own :)

    You gotta try banana cookie dough for breakfast. Just mash up one banana, mix that with 2/3 cup of oat flour and 1 tbsp of any type of spread. I used biscoff spread and it was sooo amazing but I'm pretty sure peanut butter would go very well with this too. I also mixed in some chocolate chips and vanilla extract

    Use two bananas instead of 1 ! Then add two cups of frozen mango or berries, a few tablespoons of non-dairy milk to blend. top it off with hemp seeds and enjoy the Perfect smoothie bowl/ raw breakfast 😋 🍌

    Fried Tofu is my favourite. Just cut the tofu into small square chunks and fry them in a pan or wok until each side has a golden brown sear (I prefer using sesame oil for extra flavour). Put the fried tofu in a different bowl, then add minced garlic and some chillis in the pan and fry them a bit (I like it when the garlic is extra crispy). Pour the spices into the bowl of fried tofu, along with salt and pepper as topping. Garnish with green onion, and served with rice. Measurements are up to you, I personally go overboard with the garlic because I love garlic haha. I would eat this for breakfast, lunch, or dinner lol.

    Wow these are all truly next level breakfasts, I'm so obsessed!! Breakfast is definitely my favourite meal...So versatile! I could honestly eat breakfast for lunch and dinner and it'd still be totally nutritious.

    It’s way too creamy for me but it’s worth a try to use a little avocado in smoothie bowls. It makes them really creamy and thick it would be good as a mint chocolate chip flavor too! ❤️

    I love smoothiebowls but hate the temperature (I know, I'm a baby), so what I do is I make a little less smoothiebowl (?), usually with frozen banana, blueberry and rasperberies and add vegan yogurt on top, sprinkle with chocolate granola and hemp and the creaminess of the yoghurt and the cold, fruitiness from the smoothie makes THE BEST combination😋

    Literally the best flavor combo: roasted brokkoli/brussel sprouts topped with garlic salt, and a drizzle each of balsamic glaze, tahini and sriracha

    the absolute best consistency for smoothie bowls is place 1/4 cup of water into the blended, adding frozen fruit, waiting five minutes, then BLEND TO PERFECTION

    I have an idea for a quick and quite energising snack! One ripe smashed banana(not necessarily frozen) and 2-3 teaspoon of coffee(with or without extra sugar).. Maybe you can add some dates/nuts/cocoa powder/vanilla extract for some extra flavour.. I love coffee and this combination is sooo good

    you need to try using half a block of silken tofu (Seidentofu) in the smoothie... i tried it and did not taste a thing but it was soooo creamy 😍

    Love these breakfast ideas, I really want to try the pumpkin pancakes and the grilled cheese sandwich.
    Also wanted to share this lunch recipe (the grilled cheese reminded me)- A tofu toastie:
    Heat up your toastie machine or pan and cut slices of marinated tofu (I tend to marinate with soy sauce, ginger, sriracha, lemon,garlic, and then let it marinate). Spread pesto on the bread slices and add the tofu, some vegan cheese, and fresh basil. Place the sandwich in the toastie machine and voila a delicious toastie!

    Omg you should try peanut butter jam porridge if your fan of pb&j! It’s amazing! Just make some plain porridge then mix jam around until combined and follow up with pb on top and I can also mix in the pb if u want! Super tasty I have it every morning for breakfast! It can also be very healthy if u make ur own jam or buy one with no added sugar and use pure 100% peanut butter! Love your channel!

    The only tofu that I’ve used that leaves no tofu/bitter aftertaste in smoothies is Mori-nu.
    All of the other tofus, especially the ones in Germany, leave an extremely strong and bitter aftertaste.

    For the best sweets, you can put some peanut butter between two slices of banana, dip it into hot chocolate and freeze for a couple of hours! By the way, thanks, Mina, for all the inspiration!

    My secret to thick smoothie bowls is frozen Bananas and a little frozen Cauliflower. You can't taste the Cauliflower but it helps with the thickness without adding more fruit

    Ashley Wicka has some really good videos on how to make a THICC smoothie bowl. Frozen bananas work as the best base, add a small amount of liquid and keep stopping the blender and mixing 😊

    Mina! I don't know if you can find it in Germany but Grits and Ranch style beans is a fantastic Breakfast. Grits is just polenta and Ranch style beans are basically pinto beans with chili powder and paprika and lots of spices delicious.

    I have an AMAZING breakfast recipe to share (no *exact* measurements but it works):
    It’s an cinnamon pear chia seed pudding (prepare overnight):
    6 heaping tbsp of instant oats (or oat flour, or oats if you like a chunky consistency)
    2 tbsp chia seeds
    Add (soy) milk until it’s stirable (?) but not too runny
    2-3 big tbsp of vegan yoghurt (everything is fine but i personally love vanilla skyr)
    A little squirt of lemon juice
    About 3-4 tbsp pear (or apple) sauce until desired consistency
    Some grated pear
    A pinch of cinnamon
    A sprinkle of sea salt
    and add a little bit of maple/ date syrup or something like that if you have a sweet tooth:)
    Let it sit in the fridge overnight and i promise you it will not disappoint

    Made a vegan risotto the other day.. It was enough for three people, but i ended up EATIN THE LOT.. Amazing comfort food. Incredible how you don't need much fat at all to make this creamy- risotto rice releases starch which gives it the stodge! N it just absorbs any flavour you put into it..
    Not sure for a breakfast idea,however i i
    Did use to eat fried rice in t'morn.. 🤔

    I MUST thank you for your last recipe, those tomateos literally made me craving I could cry is such an italian recipe with the garlic oil OMG I'M CRYING we call It "soffritto" (=to fry) and you MUST try It with chopped carrots, onions and celery ( I recommend very very small pieces) 🤤🤤🤤🤤🤤🤤🤤🤤🤤🤤🤤🤤🤤🤤

    I think you can get a thicker smoothie consistency if you use frozen bananas as a base and no liquid (only works if you have a high powered blender ig)

    if you want the consistency of your smoothies to be super thicc™ just add a couple of frozen mango/pineapple/melon/papaya cubes (whichever fruit you prefer) to your regular smoothie mixture! ❤️
