I could see feta or bleu cheese with walnuts and cranberries - with the apple and celery - yummy

My 85 year old dad (4/2020) told me had just whipped up a celery salad that only consisted of mayo, salt and pepper. I immediately made one with a twist: 2 stalks celery sliced & diced, mayo, Hot Mister Mustard, Brass Cuisine Garlic Pepper seasoning, 1/2 of a Roma tomato (diced) and a bit more black pepper. I did not wait an hour...ate mine immediately. Sooooo good! Light, crispy & fresh!!! Will try your version too! 😋 What a great way to use celery before it goes bad.

Sounds delicious! I'm definitely going to try it, as I have celery in my little garden.

This is seriously so delicious! We tried a very brief juicing stint in our home and just couldn't do it. So we had a lot of celery left over that we didn't want to waste. I mean, I'll gladly eat the veggies... just not in juice form. Honestly, I've never thought much of celery, but this is sooo good!

Thank you for sharing this great salad!
I suspect most people already have celery. Granny Smith apples & Dijon in their fridge. Adding chopped dates or dried cherries would add a nice contrasting chewy texture as well as a burst of sweetness.

The chopped walnuts made me think dried cranberries but the dried cherries sound even better. Instead of provolone, I am gonna use feta or blue cheese

This is actually really good and refreshing, especially if you slice the celery really thin. I'm not a fan of the cheese though. It tastes like how I imagine the 1950s tasted...
