Those are properly filled sandwiches. Which makes it worth spending money there. And that's what makes a business survive 50 to 100 years. This place is going to keep going a long time. As long as they keep serving food like that. ♥️
These guys " we make everything fresh from scratch daily" Also these guys Getting a truck full of pre made frozen french fries. Also outsources the bread. These things arent bad things, but its disingenuous to say everythingsade from scratch daily.
Those like like prepped fries. For a restaurant doing that type of volume, they probably pre-prep a lot of those staples and this case store them in their warehouse. 500lbs of fries a day is a lot. A place I used to work at used to prep them like this in large batches. Fries are one thing that are rarely done well sliced fresh and then into the fryer. Usually you want to cut, wash/soak(overnight), then do a low temp fry, cool off/refrigerator or freeze, then drop them in the fryer to order to get the best results. They come out fluffy inside and crispy out. Also, there are some things you absolutely shouldn't waste time making fresh. A lot of sauces or condiments like ketchup(you will get more complaints than praises by making it in house), cured meats(unless you have a wealth of knowledge, time, and don't mind food cost), cheese(same as cured meats unless you are making semi soft or fresh cheeses), bread in a lot of cases especially for a high volume place like this is better to buy from a bakery because you are still getting quality without having to have a full on bakery operations. The bread is made from scratch at a bakery. Not in house but still made from scratch. Semantics though I can understand that one.

Especially when bought in bulk. Cooked proper, seasoned well, presto 👍 If you want a 3-5 course meal, sit down steak. Go for it. 👍

Use a vacuum cleaner, dirt and dust goes inside rather than moving it, and only lifting the large bits of dirt
