Outrageously Good Scallion Noodles - Even Better Than Momofuku!

- Ginger scallion noodles
This makes one serving.
Ingredients:
Noodles
3 tbsp neutral oil (canola, vegetable, avocado)
4 green onion/scallion
2 garlic clove
5g ginger
1 tbsp soy sauce
1 tbsp oyster sauce (or vegetarian “oyster” sauce)
½ tbsp sweet soy sauce
1 tbsp sugar
1 head of bok choy
1 egg
1 tsp toasted sesame oil
Instructions:
1. Trim the green onions, then cut into 2-3 inch batons. Julienne the batons.
2. Grate the garlic and ginger.
3. Slice the ends off the bok choy and wash well.
4. Whisk together the soy sauce, oyster sauce, sweet soy sauce and sugar.
You can start steps 5 and 7 at the same time, or cook in the order below.
5. To a pot of boiling water, add the bok choy and blanch for 30 seconds, then add to a bowl of cold water, then add to a small plate and spread out so it can dry.
6. Add the noodles to the boiling water and cook according to package instructions. Add to cold water to stop the cooking process.
7. Place a pan over medium-low heat. Add the oil and once warm, add the green onion and sauté for five minutes, keeping an eye on the heat so the green onions do not burn.
8. Add the garlic and ginger and mix into the green onion.
9. Fry an egg.
10. Whisk the sauce and add it to the pan and stir until it thickens.
11. Add the noodles to the sauce and combine well. You may need to raise the heat as the noodles were cold.
12. Once done, add a splash of toasted sesame oil and stir in.
13. To plate, add the noodles to a bowl, then add the bok choy and fried egg and garnish with sesame seeds.
