Paupiette of Seabass

Welcome to Pro Chef Academy. In this video I demonstrate the Skills and Process to create a Paupiette of fish. This is generally a stuffed and rolled fillet of flat fish. Also in this video I create a semi roulade style Paupiette to facilitate kitchen service, as a Paupiette of fish is again generally a single fillet.
