Hi Jamie, I'm a Nutrition and Dietetics student from amsterdam. I always use your techniques and recipes as inspiration for my projects and assingments, because they're easy to make and lovely to eat. Also our campus bookstore has been selling your new comfort food book since yesterday. It's a big hit ! Thank you for sharing your recipes.
you are such an inspiration jamie- I do food tech at school for gcse and hate it but watching you cook gives me such motivation to try out new things. thank you for that x
Thank you Oliver for this step by step video - I'm going to watch this video again and then attempt to fillet my seabass waiting for me on my kitchen counter :D
Hi Jamie i was Italian Chef , i did follow your career from the beginning , you become a fantastic talented hard working chef and businessman ! you are the proof that talent is 85% work and 15% passion Italian Love You
Well, this will be new for me! I bought a whole sea Cass and it said cleaned. So sadly I w@s wrong!, only thing cleaned was all the middle. So this is exactly what I need to do! You made it look pretty easy. I have cut the head and while tail off already. Wish me luck…it’s my dinner! And suggestions on what seasonings to use?
Love you, Jamie. Got my husband to do the fillet part thanks to your demonstration. Since we had a small boat (sold it) he is used to filleting a Ling Cod or a Snapper, but not Sea Bass. So VERY helpful. We are grateful for your video!
Thanks Jamie, My neighbour very generously gave me a couple of sea bass as a Christmas present. I'm now of to fillet them for my supper tonight. All I need to know is the best way of cooking them which I'm sure I will find on the internet.
Jaime, my fillets of Mediterranean Sea Bass came out, well, WAY not as good as yours. However, I love this video and how you explain what you know about the fish and its spines and how that informs our method. Thank you. If you're ever in the Los Angeles area, I have some great taco methods from coastal Mexico to share with you!
Just what I was looking for. I'd already removed the head and was staring into the gutted fish wondering how I was going to deal with the rest of the fish and you provided exactly the info and video I needed. Thanks! ;-)
More videos like this please on the basics. Everyone and anyone can be a food critic armed with their smartphones but the true foodies are the ones that want to get down and dirty. I want to know what seafood is sustainable in Australia, what fish contain too much mercury so I can avoid giving it to my baby, how to do simple butchery etcetcetc. Some of us are not as lucky to be able to attend culinary school (and went to med school instead! :P )
I'm studying cookery in college and can fillet a flat fish but am yet to do round fish and always wondered how it was done so this was really useful! :)
I was a critical cutter in a chicken factory and its down to that ! That i didnt even need to watch this i worked it out on my own i got it perfect first time that was 1988 when i was 18 now im a pro at deboning anything that used to move lol 😂
Thanks a lot! That was really helpful Jamie! I cook all the time sea bass but i always remove the the spine at the end....and i make a lot a of mess. Next time i will try this
So good.. I love the sea bass fish but unfortunately we don't have them in Saudi Arabia 😥 .. we have something called Coral trout ( locally Najel ناجل) it is delicious also
YES! This is how it's done! Bought some seabass fillets from sainsburys the other day and the flesh was all torn and broken where someone had forcefully been pulling out bones :/
I bought a sea bass from the fish counter and tried to fillet it without watching any how-to videos. I just chopped the head and tail off then grabbed the spine and pulled it out.
Mmm I love fish but never, never ever have have done this myself, , can you do this on a barbecue? Our Aussie tradition is a bbq lunch ,been like that for over a decade:) if not the pan will do the trick :)
A super tasty way to cook fish on the bbq is to leave the fish whole and gutted, put butter, lemon, and herbs in the gut cavity, and wrap it up in aluminum foil. Toss that on the grill at low heat and you got a tasty fish. I wish I could give you precise cooking times, but I usually just check it every few minutes.
Here in Spain we tend to have our fish whole....if not I ask the girl (or boy!) in the supermarket to fillet it for me!.....whatever Sea Bass (Lubina) or Sea Bream (Dorada) are my favourites.....
I cook mine whole too, tend to put it in the oven in a little tin foil parcel with tomatoes and garlic and all the seasoning with a splash of oil. Or pan fry until super crispy
I ve seen at least 20 videos on how to fillet a seabass and this is definitely the cleanest. Everything seems so easy when you do it. 👏🏻
Your method of fillet fish is best than all as i have seen a lots of chefs who left the meat while fillet but you done stunningly best. 👍💖

You make it look soooo easy. Can't wait to show this off this next time I'm camping with my family.
Wow, so much difference between how a chef does it versus how all the amateur you tubers. Way to go Jamie!
I love these "Skills" videos: please do more of them.
And surely the sharpness of the knife is crucial to all of this?! Must be! Will give it a go!
Thanks for these tips, Jamie. I love them as much as the full recipes. Keep it coming!
Jamie: Sea bass is a wonderful fish and can be fairly expensive
Animal crossing players: No

Well done ja. Ie boy and with a chefs knife too! No fillet knife needed 👍👌
You’re the man, Jamie!
Love you man. All your success is down to keeping it simple and real. Some people don't get it; but I always have!
I love these practical sort of how-to videos.

Out of all filletting videos this is the only one that does it right ....
Great explaination, James!
Thank you Jamie. You helped me fillet my seabass for the first time
Great video. Even with a sharp knife, I always struggled cutting the fins off. Using scissors looks much easier.
Just what I was looking for. I'd already removed the head and was staring into the gutted fish wondering how I was going to deal with the rest of the fish and you provided exactly the info and video I needed. Thanks! ;-)
I can’t wait to do this for my family. It’ll be my first go at filleting and I’m sure you make it look easier than it is
Yes I have eaten it in a restaurant....never made it myself though....and it is superb....you're right!
This is the best technique i've ever seen.
Best chef for the people

+Abdullah Barasheed Don't you have those nile perch ? I think that's as close as you get.

CHILI JAM❗️
I dont like seafood, but this made me want seafood
Well done
Such a cool video! I have always wanted to know how to fillet fish! Thanks ***** ! :)
Love it great video.
What about the pinbones?
works well.......thanks Jamie! :D
I bought a sea bass from the fish counter and tried to fillet it without watching any how-to videos. I just chopped the head and tail off then grabbed the spine and pulled it out.
When you filet the bass, and you cook with the scales on, are you descaling at all? Or just cutting the fish, and putting it on the stove?
Always descale. Depending where you get seabass it may come descaled already.

What do you do with the fish leftover after fillet just dumb them
Fish stock, I presume.
Harold Smith
clever but i believe only asian dish required fish stock
rvmg dumb comment.

To fillet a fish by yourself is all about prestige. It feels better if you have dont it by yourself instead of letting someone else do it :P
That's the best way to eat it. On the bone it's always more flavorful! Have you ever tried to eat bass or bream cooked in a salt crust? It's divine!
Cubans eat them whole too, the head is the best part
I cook mine whole too, tend to put it in the oven in a little tin foil parcel with tomatoes and garlic and all the seasoning with a splash of oil. Or pan fry until super crispy
@@evanq4366 The head is delicious full of juicy tasty flesh and even the eyes
Is there going to be a Countdown to Christmas again? Just like last year :D
jamie can i give you a hug
thank you
better than the salmon filetting 😊
thank you, I always have a hard time filleting seabass
Cook it Jamie !
