I ended up with about two dozen cookies. It really depends on the size you make. If you make the "regular" size you get commercially, you make get more. Mine were slightly larger. The almond extract is noticeable in the cookie, not that strong...but I love the almond flavour. Nothing wrong with substituting the almond extract with more vanilla extract. The only thing that that might do is darken the colour of the cookies a bit. Good luck!
Frothy is a very good word, I agree! lol. The best advice I can give about these is to get the clean cotton gloves, it would be a lot more pleasant. Unless you are one of those people that can handle hot things (my hubby washes dishes in burning hot water I can't but my hands in). I would love a video response if you make them.! Thanks Beth.
@RockPrincess13sc The trick with these is to make sure that they are very thin when you cook them and that you cook them until they are light brown all over, this makes them crispy when they cool. They also need to be stored in an airtight container. I think sometimes that it depends on the humidity in your house as well. I made these in the winter and it is quite dry here in the winter. Hope this helps if you plan on making them again.

@goingforthewin 1/2 a cup is 8 tablespoons (16tbsp in a cup). It is easier to measure 1/2 cup than count out 8 tablespoons! The test round is a great idea, you will be a pro at them!

One thing i found while making these was if the cookie got to cool i could pop it back in the oven and warm it up till plyable again. I also made your Breackfeast cups today, all fabulous.

These are fantastic, and the assembly isn't as hard as I thought. I just leave the cookies I'm not folding in the oven, I figure 30-40 more seconds won't kill 'em. Works like a charm.
Cornstarch is literally starch from corn. It looks like flour but is a bit finer grained and, at least around here, is sold in boxes. It can be found in the baking aisle of the grocery store. Corn starch is sometimes used in the place of, or in addition to, flour in recipes. It is also used to thicken sauces.
@KatNip2007 hmmm...interesting point. Someone could probably do it this way as long as the heat was low enough, you wouldn't want them to have brown marks on them, not sure if they would be as fluffy.

@xXMountaindewXx They will taste fine after 3-4 days but they may lose some of their crunch. It helps to make sure that they nice and thin and uniformly baked and then store them in a tightly sealed container.
@SaiSuigetsu I think that the fortune cookie companies that manufacture them add some food colour to them to get them that golden colour. The other alternative is to let them bake longer so that they are brown to the center (problem being that the edges may get black)
@Emilbiany The only thing I can think of is that you didn't spread the batter thin enough on the cookie sheet and that you didn't bake it long enough. It may take a couple of tries to get the hang of it.
@oxthetracyfamilyox Melt some chocolate chips at 50% power in the microwave, no more than a minute at a time until the chocolate softens and then 20 seconds at a time after that until the chocolate is completely melted. Dip the completed cookie into the chocolate and then place them on waxed paper or tin foil until the chocolate hardens. I would add the fortunes after the dipping because the chocolate may go inside and get on the paper.

I did have some sore fingertips after making these, but no long term damage! I would wear gloves the next time I make these. The cookie sheet was a Xmas present from my son. It has a "shovel" kind of shape. You are supposed to be able to "dump" the cookies out onto a plate after they are cooked. That's why one of the sides has no edge and goes up. I find that things have a tendency to slide down the "slope" while cooking though. I wouldn't get another one.

@InkChickPinUp I don't know how long these will keep. What happens to these after a few days is that they soften and aren't crispy anymore. You should make a batch WAY ahead of time and experiment with storage methods (freezing some, keeping some wrapped in plastic) to see what you can do do keep them crispy.

They were easy. The first cookie I showed was the first one I folded. Never did one before that! So you know it was easy (except for the burning fingers) lol.

They can last a long time wrapped (a couple of weeks or more) or in a container. The problem you will run into is that they may become less crispy over time and may be softer.
I made these once a few years ago ^-^ they came out delish. I even added some chocolate flavoring to my last batch of dough and loved the flavor. Definitely easier to make when you have a friend helping out.
Could it be that the cookie is too thin and it rips when you take it off the sheet? I would also make sure that the cookie sheet is well greased with shortening or non-stick spray. Make sure you use a very thin spatula with a sharp edge to peel off the cookies. I hope this helps.
@mischief13 Depends who they are for :) For my son's class (grade 5) I had printed off a bunch of riddles and jokes and inserted those. If you are making them for a special someone that you love you can come up with some more suggestive ones :D
