Being born Portuguese and living in Australia for the past 52 years my mum made quite often and she always used either chorizo or Portuguese sausage- no other sausage not even Italian unless you want it to taste like fennel, also I didn’t notice a rooster in the kitchen where is your rooster buddy
You really can’t make Portuguese bean soup without linquica or chourico especially from gaspars or michaels well worth to call companies and mail order or call they will tell you where to buy also amarals and a Portuguese store in fall river Massachusetts called Portugalia..
