    Yes, my Granddaddy(RIP)used to Cut his Chickens flat & "Tuck" the Wings like that when he'd BBQ but he called it "laying 'em out"? 😂 Your zeal & the way you talk about your process reminds me a lot of him.     This was a couple years ago...cooked it over a bed of herbs. Used thyme, rosemary and I think sage. Can't quite remember ha! But did it over charcoal. The herb flavor was smoked into the chicken. Amazing.

    I did this same technique this past Thanksgiving with a 25lb turkey. It worked flawlessly! All everyone said was "this is the JUICIEST turkey I've ever had!" I'll never cook a bird any other way. Also if you let the bird "dry brine" a day or two before the skin will be so crispy!

    Best and only way to cook chicken! I prepare it in the morning with my rub and then leave it in my refrigerator all day uncovered. Really dries out the skin so it's crispy when it's done cooking. I spritz the bird with olive oil just before I put it in. You guys have great tips!. Thank you!

    Great video! Been spatchcocking chickens and turkeys for 2 yrs. The only way to grill 'em! I take a boning knife and remove wishbone and breast bone. Allows seasoning to penetrate and makes it very nice for slicing! Stay safe! God Bless!

    I spatchcock my turkey & roast it with regular seasonings on Thanksgiving. It's a real time saver & bird is very moist. Spatchcock is the way to go.

    I love spatchcock chicken. I use to get half a chicken with fries every Saturday when I was stationed in Germany. I cooked my Thanksgiving turkey using the spatchcock method last year.

    I spatchcocked a turkey last year...now my kids won't let me cook it any other way. I haven't done a chicken, but after seeing you and Mike just nail these so perfectly...I'm gonna have to give it a try.

    I’ve been spatchcocking chickens for a while now, but a little different, on the backside I remove the bone and cartilage. I make a small cut on the sides of the bone and hook my finger under that bone and pull. This makes it easier to cut the chicken in half, I sell bbq in S.Mexico, this helps dividing it up. Another thing I do is run my fingers under the skin, breast, thighs and legs to separate it from the meat, which I then put my rub under and over, this also makes the skin crisp, never had a complaint! Great video!

    I love love the info you gave about the wood and how to stack it. Question: Grilling is something I am working on becoming a pro at like you...can you tell me what kind of wood you are using and can you use the same wood and method of stacking in a kettle or barrel style regular charcoal grill? This is awesome AB!!

    Very Nice, sir. I have been doing my chickens butterflied for years. I have lots of options and many pits, but the best way for me is on my Weber Kettle. Get a hot bed of coals and put the chicken on the grate directly over the fire, breast side up to start. Then flip it after about 10 minutes, and do the same to the breast side to get a nice char and markings, then flip it again to breast side up. If I don't like the way the breast side looks, I might flip it again and char it some more... it always depends. It can take anywhere from 45 - 60 minutes depending on my fire. I love what you guys did here though. Very professional. The other difference with mine is I loosen that skin all the way through and get my seasoning beneath on the white and dark meat. Love your channel and your work. You're a pro....keep up the fine work!

    I've don spachcock chicken in an oven but not on a grill. Olive the concept. Also, I like the Idea of a dedicated garden sheer. I'll be getting one just for cutting in the kitchen. You have so many great ideas.

    Spatchcocking a chicken or turkey is simple and takes less smoking time than smoking a whole bird. I've smoked several spatchcock chickens and enjoy it.

    my mother does this with little cornish hens, so that's something you might try. They're really good, and being small they cook fast. and would fit on even one of the little bitty tailgaiting grills, which i know a lot of people in apartments use.

    yup looks good. Cook time to me is just a guideline. Baking however I follow it pretty close. Lately I dont even use the thermometer- since it is broke and I keep forgetting to grab another. Personally I enjoy the variance you get as long as its done and not burned Im good with it.

    Great video AB. Spatchcock is the only way I cook chickens and turkey on the smoker or grill. Like you said it cuts down on time and makes for an even cook cause dark meat finishes at the same time as the white meat. I also go ahead and cut out the wishbone in the breasts so I can just slice the whole breast when it’s done. Keep the good content coming!

    I've never heard about Spatchcock chicken but I tell ya what I might not make it until next Sunday for dinner. You gave me a great Idea though I had already took my cornish hen out cleaned it opened it up oil it down then rubbed some mustard on both sides then seasoned it and now its marinating in some whorstishire sauce and garlic and a lil smoke sauce ready to hit the grill tomorrow for dinner. Ill let you know how it came out. I've never put a cornish hen on the grill. I usually bufalo wing them with the seasoning or regularly bake it.

    Looks awesome. I've only done spatchcock chicken using my Ninja Foodi grill indoors. It's a great technique for a faster cook

    I've seen spatchcock chicken on the food network over the years.
    That chicken looks so good. Wish I was your neighbor, I'm sure your neighbors love the smells that come from your backyard during the summer.
    I bet some of your fans in the Lone star state were half proud and half jealous that you had one of the vertical grills made in the state of Tx ( I'm assuming). Some of us Southern Californians know a thing or two about Tx smoking, lol😁 Great video

    AB you never disappoint me on your recipes or techniques I've done my chickens that way b4 but never heard of the term spatchcock thought it was a inside joke at first 😁 my term was always butterfly the chicken and rub it down lightly with butter I'll try olive oil on the next run and I'm going to order some of that seasoning as well, been using one called slap yo mama stay safe and sanitized 😷 holla back at ya
