I smoke my turkey breast side down most of the cook. Then flip over the last 2 hours…. For a more moist breast … but your bird looks good. I use applewood chunks and pecan…. Once I get good color I wrap my bird in foil Did you build that grill setup ?
A couple of comments buddy first off the bird looks good and delicious but through experience research and everything come to find out when you're smoking a bird you want to put the dark meat towards the fire instead of the white meat that will offer a more juicy cook and more even cook in the long run secondly I would stay away from using wet wood that's more so used for smoking for preservation versus smoking for low and slow cook take those wood chunks and just sit them on top of the grill for a while while your grill is heating up let those wood chunks heat up and that offers a cleaner smoke
