    Your Nonna is absolutely adorable! you are so patient and respectful of her. How nice! I have a pot of her trippa on the stove right now. Reminds me of my grandmother and exactly her recipe as I remember. Thank you

    Rossella, We are so blessed to have grown up with all the love, good food and Some not so good food. Though I do like tripe, my Dad would on occasion do one of his best Cucina Povera dishes, a big pot of Sufritt with a tray of polenta covered with marinara, beans, grated pecorino and good olive oil! My Mom would make her pork skin bracciolle in the sauce stuffed with garlic, fresh herbs, red pepper, hard boiled egg, provalone, and pancetta. Sometimes a good condiment can overcome not so great texture!

    I could have come right through the screen for a bite or 12 of the tripe… I haven’t had it in a million years but I still remember how much I loved it. My grandfather used to make it every now and then and I couldn’t get enough of it. I was in the minority of the kids who liked it. I’d kill for a bowl of it now.

    I think it’s fantastic that your shows includes old world recipes. We used to travel to South Philadelphia to buy Tripe sandwiches. My mom would serve tripe over cavateli. It was one of my favorite meals. Love your nonna too!👍🇮🇹

    Im Siciliano and Mexicano and when i was 7 yrs my job was to cut the trippa into squares and stripes I love your nonna and I follow you on IG keep up the good work

    Great winter dish with a good red wine to drink. The only difference along with the minced onion I also saute minced carrot and a bit of celery. Various slight regional changes in Italy.
    Hot pepper, beans, etc.

      I added some carrots to my tripe with tomatoes once and didn’t like it. On the whole, I’m not a fan of cooked carrots, but hey, whatever your preference, ok by me.

    My Aunt Tillie used to make this many years ago when I was very little and I never tried it, I wish I did but I was too squeamish back then. Now I’ll try anything once! She used to make zampone too and I never tried that either.....so happy you are doing these videos, these foods and traditions are dying and you are doing a great thing in preserving them! Thank you, your Nonna is adorable :)

    Okay, I've NEVER commented on your videos before....I watch them all the time but I had to stop and let you know that she (Nonna) literally looked about 18 years old in this video she lit up and came to life so much!! It was so great to see her reaction even if most people these days aren't gonna mess with tripe.
    I thought it was just a Calabrese thing that they all sat around and bemoaned how horrible tripe was to clean and how rancid it smelled yet couldn't WAIT to have a great big dish of it!! Lol
    I think this video is my favorite so far!

    I agree with nonna lol. Tripe is literally one of my favorite foods. My mouth is watering just thinking about tripe and potatoes... mmm!

    Wonderful recipe and done so well by the Chef. The Chef is correct those in the know rather have Tripe done this way then seat down to a steak. It's all about the texture it is a bit gelatinous but in a good way. This is a gourmets meal, be a little adventurous an try it you will be happy you did. I definitely have to get the Chefs cookbook.

    Nonna is a treasure !! ❤️. I never liked tripe because Mom & Dad immigrated from Italy and I was afraid to try it. Now that they're both gone, I'm trying everything that Mom made that I was afraid to eat.
    .
    And tripe is one of them !! That you and Nonna for the recipe and how many will this serve. It'll be just for me. Also, what type of tomatoes did Nonna use ?

    never tried tripe.. doesn't look too appealing but I would try it if I had a wonderful Nonna cook it for me.

    Hello Rossella!! My father used to make this. It’s never appealed to me, so I’ve never tried it. I remember it having a pungent smell, LOL. Hope you’re having a nice day!

    My husband loves tripe, and I will admit I’ve never made it for him. Have several local Italian restaurants that still make it and we go maybe twice a month so he can have his tripe.my mother-in-law used to make it, but not with potatoes, just in the sauce, then served with pasta.
