    That looks delicious ! She's a great chef ! I've cooked tripe this way before, but not for a few years. Time to buy some white honeycomb tripe ! That impossibly red tomato sauce is gonna be hard to lay my hands on. Will have to buy a bottle of this stuff from the Italian deli. Thank you Aden, thank you Allessandra ! Glad to be a subscriber !

    My new found favourite Italian chef. Fantastic video, i remember my mother cooking tripe and onions. Now you never hear of it anymore in the UK. I am in Italy end of July for 10 days, but sadly not in Rome, otherwise I would have been knocking on the door of your restaurant.😊

    I had tripe once at my godmother's house when I was a kid, she kept saying it was a special pasta, and it was served in a light tomato sauce. I remember it being chewy and when my parents explained what it was on the ride home I couldn't believe it.

      Secondo me è una delle caratteristiche più importanti di questa ricetta. Ma parlerei più di CALLOSITÀ che di GOMMOSITÀ (due consistenze che possono essere confuse ma sono diverse).
      In Italia la trippa si cucina in tutte le regioni: anche se sono famose, per essere maggiormente propagandate, La Trippa Romana, la Trippa alla Milanese (Busecca), la Trippa Fiorentina, la Trippa Napoletana ecc...
      Non è una ricetta difficile.
      Secondo me, la difficoltà più grande è nella COTTURA: per evitare la Gommosità eccessiva o che diventi molto molle: a me piace una leggera Callosità (che non è gommosità).
      Per ottenere il grado di consistenza che più piace(è anche un fatto di GUSTO PERSONALE) bisogna controllare spesso la trippa mentre cuoce. Deve cuocere a media temperatura (si vedono poche bolle sulla superficie del sugo).
      Poi delle varianti italiane a me piace quella con le patate. C'è chi usa i fagioli.
      Ripeto è facile da cucinare. Soltanto un po' di attenzione alla cottura per evitare a gommosità o la durezza o la mollezza. E raggiunge il grado di consistenza preferito, secondo il proprio gusto personale.

      Le differenze non sono grandi.

    В България правим шкембето на супа с прясно мляко, поднася се с оцет, счукан чесън и лют пипер. Преди беше ястие за простолюдието (както е била и супата "рамен"), сега е деликатес. Със сигурност ще сготвя това, изглежда вкусно!

    La trippa di per sè ha solo un 5% di grassi. Diciamo che è acqua quasi per 3/4.
