I use wind power on my farm and haven't had to pay an electricity bill in decades because there almost always wind. I collect energy with solar panels from the turbines to have energy for rare cases where there is no wind.

china actually has more solar, wind, hydro installed capacity then any other country. In fact, if u add up the top 5 other countries for each of these renewable energy types, they will still be less then whats installed in china.

Mei Cai is a common Hakka cuisine made by pickling and fermenting radish leaves. The main production areas are in Meizhou and Huizhou regions. It is said that the vegetable seeds were sent by Meixian Gu, so it is called Meicai. It is a characteristic traditional famous dish in Guangdong (Meizhou and Huizhou) and belongs to pickled food. Mei Cai has a long history and is one of the three famous dishes in Lingnan. It is a famous traditional specialty of Lingnan and an important part of Hakka cuisine culture.
Mei Cai, which has a cultivation history of more than a thousand years, was once listed as a tribute to the imperial court by successive dynasties and was called "Huizhou tribute vegetable".
Meicai braised pork, a traditional famous dish of the Han ethnic group, belongs to Hakka cuisine. The production materials include pork belly, pickled vegetables, scallions, ginger slices, etc. Usually, the pork belly is boiled thoroughly in a soup pot, seasoned with dark soy sauce, fried and colored, and then sliced into pieces. After that, add seasonings such as scallions and ginger and stir fry for a while. Then add the soup and simmer over low heat until tender. Put the pork belly into a bowl, top with plum and vegetable slices, and pour in the original soup to steam through. When serving, put the meat back on the plate. After cooking, the meat is tender and fragrant, with a salty and slightly sweet taste, and is fat but not greasy.
The rice pairing is very delicious.
梅菜，是一种常见的客家美食 ，用萝卜叶腌制发酵而成。主要产地是在梅州地区、惠州地区，相传为梅仙姑送的菜种，故叫梅菜，是广东（梅州、惠州）的特色传统名菜，属于腌制食品。梅菜历史悠久，是岭南三大名菜之一，为岭南著名传统特产，是客家饮食文化的重要组成部分之一。
有着一千多年种植历史的梅菜曾被历代皇朝列为宫廷贡品而被称为“惠州贡菜”。
梅菜扣肉 ，汉族传统名菜，属客家菜 。制作材料有五花肉、梅菜、葱白、姜片等。通常是将五花肉上汤锅煮透，加老抽，油炸上色，再切成肉片。之后加葱、姜等调料炒片刻，再下汤用小火焖烂，五花肉盛入碗里，上铺梅菜段，倒入原汤蒸透。 走菜时，把肉反扣在盘中。成菜后，肉烂味香，吃起来咸中略带甜味，肥而不腻。
配米饭非常好吃。
梅菜扣肉这道菜整个常见流域都有。四川，湖南，浙江等等。This dish is very common in the south part of China.
目前看浙江梅干菜比皖南的好吃。梅州的没吃过，不是太清楚。
@@米虾-g5j 我们浙江叫梅干菜扣肉。会有些微甜。安徽的可能会偏咸一些。我到目前吃过四川的，湖南的，浙江的，安徽的，还有广东的，我觉得都还蛮好吃的。主要就是要火候到位，把肥肉烧到快化，吃的时候已经没有油腻感。总之这个菜整个长江以南地区都有，烧法大同小异，口味也非常接近，无非有些地方会偏甜有些地方偏咸，有些地方会放一些辣椒。我家梅菜扣肉的肉吃完会用剩下的梅菜做成梅干菜饼，超级香。
A good all around dipping sauce:
⅓ cup rice vinegar
½ cup soy sauce
⅓ cup thinly sliced green onions
1 garlic clove, minced
½ teaspoon sesame oil
½ teaspoon crushed red pepper flakes
½ teaspoon minced fresh ginger root
1 tablespoon chopped cilantro
1 pinch sugar
Let sit for 15 minutes before serving.
You can always adjust each ingredient to your taste.

So many incredible views on the train! Yunnan is one of the most beautiful provinces in China, amazing natural scenes, total different from the provinces you visted before! There are also many addorable hostels in those ancient towns which are also very affordable (below 30 euro). Can't wait to see your next video in Dali/Shaxi/Lijiang/ etc. !
You have been to the city and some attractions, where to go later? We suggest you to go to the natural beauty areas in China and challenge yourself, such as not too hot late summer and early fall to go to Huangshan, Huashan, Lushan some hiking dangerous paths. You can also go to Tibet and Xinjiang in summer. Go to Harbin to see ice sculptures in the winter season when there is snow, and ski in Changbai Mountain and Daxinganling.

I recommend you to take a sauna，This place is called He Ri jun（何日君）。This place is great for relaxing, after purchasing the ticket, the food is free for 20 hours, relax in it. It might be a miscommunication as far as the hotel room supposed to be for family with kids. You could ask the hotel staff to to get you another room.
Luke, I like your being honest about the suggestion from a fan on economy class of the highspeed rail train. The expensive 1st class is for good reasons; space and comfort. Honesty is the best policy, and you expressed with mellow and polite way. I think that is the reason why people like to watch and subscribe your channel.
Hi Luke and Naomi, as a Yunanese living in Ireland now, I'm so so happy to see you are in Yunan. I watched all your videos in China and I absolutely love you guys! Luke is funny and Naomi is so cute, I love both of you are so open minded and genuine. It's a long post here and could be overwhelming, but I just can't make it short when it comes to the recommendations of traveling to Yunnan. These are just some personal recommendations and every one has their own preferences and tastes so please don't feel bad if you don't go to the places that I mentioned here.
1. Restaurants: as some other friends already mentioned here, it's the perfect season for wild mushrooms. Here are two restaurants for mushroom hotpot: Shanhai Dianjun Yinxiang （山海 滇菌印象）and Ai Shang Jun (爱尚菌）as others recommended. Just a reminder that wild mushrooms could be pricy because they are very hard to find and very seasonal. One way to do it is tell the restaurant your budget and let them select mushrooms for you.
2. Accommodation: around Green Lake (翠湖公园）or Nanping Street(南屏街）will be good. Easy to get around.
3. Transportation: basically metro can take you to most places but when it comes to getting curtain places, such as specific restaurant, taking a taxi might be easier. You might have noticed there are not many traditional taxis on the road because most of them are booked online. You can go to your Alipay, search Didi and that's the company to go for taxi. Money will be paid through Alipay as well when you getting off the taxi. Just bear in mind to choose the starting place that easy for the driver to park and find you. The car licence plate will be shown on your order.
4. Places to go: it all depends on how long you will stay so I'll just list some places as a reference. In Kunming, go to Nanping Street city center（南屏街）, Green Lake Park（翠湖公园），Dianchi Lake (海埂大坝), Xishan West Mountain（西山）. I highly recommend you go to my hometown Dali if you have time. And as you planed, go to Tibet direction and you can think about going to Shangrila （香格里拉) along the way. That's just absolutely stunning natural sceneris.
5. Groceries: as others mentioned, Zhuanxin traditional farms market（篆新农贸市场）is an amazing place to see all the fresh vegetables and fruits and mushrooms and meat etc., but if you are looking for some familiar daily stuff like yogurt and such, Hema(盒马）will be a good supermarket to go.
