I sure like the sounds of singles and twins better than the 4s or rare 6s (Though the Honda CBX was a glorious thing to behold). I hate the sound of two strokes. And I LOVE what Allen Milyard builds with those old motors. Look at him on You Tube.

A lot of these bikes are just stripped down, hot rodded UJMs of the 70s and 80s, and UBMs of the 60s. Which is cool. They look like something an ordinary guy could ride comfortably.
The start, like the whole race, is on a hill. So yes, the block prevents the bike from rolling back and so avoids the need the riders to launch with a foot or hand on a brake.
Must be a youngster. No concept of history, nostalgia, or the fact that it's more fun to ride a "slow" (by 2020 standards!) bike fast than to drive a fast bike slow. And, Max Wrist notwithstanding, you should NOT ride a fast bike fast on public roads. Yes, I am old. I hope you will be old someday. Then you'll get it. Peace.

My father in law had a big 1970 Ducati. I dont know what size or model. But he sold it 30 years ago. That would be worth a lot today.

The ancient Harley XR 750, the same bike Evel Knievel made most of his jumps on (!!), dominated AMA flat track (dirt roundy round) racing for decades.
