The first knight guy you see past the dragon on the right in the room there in a door way with stairs going up to a bonfire. You can't have enemies following you otherwise you won't be able to light the bonfire.
Bruh it's your fault for not exploring all available routes, usually people look in each path to see if there's a dead end, bonfire, or item they can get before going to the other path.

I would strongly recommend starting DS1 before DS3 (DS2 is optional). First: DS1 is a masterpiece. Secondly, there are a lot of awesome moments in DS3 that are sent and continue DS1. Without the context of DS1, you are depriving yourself of the most delicious thing in DS3. you're just spoiling them for yourself.

I did ER first and Ds3 just a couple of weeks ago. I feel like the difficulty of Ds3 is overrated. It was easy except for champ Gundyr, Nameless and Soul of Cinder. The game is linear so its almost impossible to miss stuff if you look. Only done the base game though.

Comparing DS3 to Elden ring is like apples to oranges. You have very little cheese to use in DS3 compared to what you can do in ER. The main thing that will get you through a fight is pure skill and determination rather than the next OP piece of gear. No spirit ashes, no ashes of war that take like a quarter of a health bar, none of it. Pull up your boot straps and saddle in, you gotta learn the ropes the hard way like a true gamer...
