I am quite enjoying this series, and I am boarding and insulating my small garage space in parallel. I can sit and watch you stuff , while relaxing in there , and seek inspireation ( or at least a good reason to stop ) Already installed the recommended diesel heater, and just got the doors to insulate, panel and fix with cleats and the dust collection to complete and then all done for a few months
A tip re your carbon monoxide alarm. Don’t leave any solvents open too near it, or it may false trigger. I found this out the hard way, by leaving a pot with some shellac sanding sealer about a foot away. Next day, alarm wouldn’t stop, even when taken outside in the fresh air.
Is it really worth making access for storage above the ceiling ?- you'll just store more "stuff" up there!! I'd just put more insulation up above the ceiling boards - and run the lighting cables in conduit underneath so it's easier to change if necessary.

Its hard to tell how much space you'll end up with in the 'loft' space judging by the camera angles and what intend to store up there.
