Wolverine is the anchor being of his universe because he was the most famous and recognizable character from the X-Men movies. With him dead, Disney has no reason to keep the franchise/universe created by Fox, and that is why the universe is dying in the movie. This is also the reason why Johnny Storm, Elektra, Blade and Gambit are in the Void: their movie franchises failed, and that translates as their universes getting wiped out from the multiverse.
Deadpool said he destroyed the watch after saving everyone. Deadpool and Logan are still in the Fox time line. This Logan is from a different timeline. All the other Wolverines he visited were different timelines.
Tony Stark was likely an anchor being in Earth-616, but there are likely others. No one said that an timeline has to have just one anchor being or that new ones couldn't come along. In fact, it has to work that way because the lifespan of one anchor being is nothing compared to the lifespan of a universe. It's just unfortunate for Deadpool's world that Logan was apparently the only anchor being and no one replaced him.
Paradox wants to destroy that timeline, it’s possible that Wade was also an anchor being which is why he wanted to move him into 616 so he could test his time ripper. He thought Wade would just agree to join the Avengers in 616 but instead he decided to save his timeline.
In regards to why he hates the avengers, he says that in his universe the xmen were all dead and that he went to kill people, guilty or innocent. So he basically went on a rampage killing indiscriminately. So he probably had to fight the avenger’s. Especially cause in xmen 97 the avengers are used by the government.

The problem they have created with the "Nexus" concept is that at some point, that nexus being will die and the time line goes with them. Eventually all time lines will cease unless the nexus is immortal.
The biggest question that nobody is awaking is, HOW TF DID A GROUP OF HUMANS kill the X-men in Wolverines world?
Jean or Storm alone could’ve disabled or a group or humans. Prof-X could’ve just frozen them all and erased any memories they had of ever hating humans..
To me this is the greatest plot hole.

Wolverine is the anchor being of his universe because he was the most famous and recognizable character from the X-Men movies. With him dead, Disney has no reason to keep the franchise/universe created by Fox, and that is why the universe is dying in the movie. This is also the reason why Johnny Storm, Elektra, Blade and Gambit are in the Void: their movie franchises failed, and that translates as their universes getting wiped out from the multiverse.

Deadpool stated in the movie that he destroyed the time watch when he's talking to Paradox at the TVA. That's why he needed their device.
Tony Stark was likely an anchor being in Earth-616, but there are likely others. No one said that an timeline has to have just one anchor being or that new ones couldn't come along. In fact, it has to work that way because the lifespan of one anchor being is nothing compared to the lifespan of a universe. It's just unfortunate for Deadpool's world that Logan was apparently the only anchor being and no one replaced him.
Paradox wants to destroy that timeline, it’s possible that Wade was also an anchor being which is why he wanted to move him into 616 so he could test his time ripper. He thought Wade would just agree to join the Avengers in 616 but instead he decided to save his timeline.
In regards to why he hates the avengers, he says that in his universe the xmen were all dead and that he went to kill people, guilty or innocent. So he basically went on a rampage killing indiscriminately. So he probably had to fight the avenger’s. Especially cause in xmen 97 the avengers are used by the government.
